@beautifflyeats Restaurant-Style Shrimp Fried Rice Summer is almost over for my kids and it’s time to go back to school. This shrimp fried rice takes less than 30 minutes to make for a fraction of the cost of takeout. Fried rice is a great way to clean out the fridge. You can use whatever protein you have on hand. Ingredients: 3 large eggs 3 scallions ½ onion, peeled 1 cup frozen peas and carrots 3 cups cooked rice, cold Shrimp Marinade 10-12 jumbo shrimps 1 teaspoon light soy sauce 1 teaspoon oyster sauce ⅛ teaspoon garlic powder ⅛ teaspoon onion powder ⅛ teaspoon salt ⅛ teaspoon white pepper 1 teaspoon cornstarch ½ teaspoon baking powder Rice 1 tablespoon chicken bouillon ½ teaspoon MSG ½ teaspoon garlic powder ½ teaspoon onion powder Sauces to fry rice 2 tablespoons light soy sauce ½ tablespoon dark soy sauce 1 tablespoon oyster sauce 1 teaspoon sugar 2 teaspoons sesame oil Instructions: Marinate shrimp with marinade ingredients & set aside. Crack eggs into a small bowl and beat until combined. Chop the scallions, separating the white and light green parts from the dark green parts. Dice the onion. Heat oil in a wok over high heat until it shimmers, about 1 minute. Add shrimp and cook for about 2-3 minutes or just until it slightly turns pink. Remove and reserve. In the same pan, sauté the frozen peas and carrots, onion, light green and white parts of the scallions with a pinch of salt and pepper. Add in a bit more oil, if needed. Cook until tender, about 1-2 minutes. Then remove and reserve. To a wok or large pan, add oil. Pour in the eggs, wait for about 10 seconds. Gently scramble until almost done. Remove and reserve. Add rice to the wok, breaking apart with your hands, if needed. Season with the rice seasonings. Then add back the reserved, cooked ingredients. Season with the sauces for stir fry. Mix well. Cook for about 2-3 more minutes on high heat. Turn off the heat, mix in the dark green part of the scallions and sesame oil. Give it a few more tosses, and you just made shrimp fried rice at home. Enjoy!

Cook the pasta until al dente, according to package instructions. Drain and let the pasta chill. Cook the ears of corn your favorite way–boiled, steamed, or grilled. Veggie Stew

Cook a small handful of chickpeas and (separately) the same amount of black beans, having soaked both overnight.
Steam a couple of potatoes chopped into small bite-sized pieces.
Set both of these aside, and in a good sized stew pot sauter in a good glug of olive oil ½ onion, a good sized clove of garlic, and a small piece of shallot (all finely diced), along with ½ a chilli, and a handful of cashews.
Add in a small tin of diced tomatoes, rinsed with ½ its size of water, a good glug of V8 juice, salt, pepper, Maggi, a dash of curry powder, and a good dash of dried basil, oregano, and Italian herbs.
Add in ½ cup French lentils.
Cover, or not, depending on the liquidity of your sauce: you'll want it somewhat liquid, to cover all the veggies, but not soupy.
Let simmer for ~5 minutes, stir, to prevent burning on the bottom.
Add in a zucchini, sliced into small bite-sized pieces. Stir, to prevent burning. Simmer for ~5 minutes.
Add in the beans and chickpeas, continue to simmer for another 5 minutes until the zucchini is soft and everything is blended.
Taste and season to flavour, serve in warmed bowls.

If you like recipes like this, preorder my first book ‘Tapped In Wellness’ : https://amzn.to/4cIFJbm @tappedinwellness INGREDIENTS 5 ripe plantains 1/2 of a white onion, diced 6 garlic cloves, chopped 3 cups vegetable stock 1 can of coconut milk 1 rosemary stalk 3 Tbsp garlic powder 3 Tbsp onion powder 3 Tbsp dried basil Squeeze of lemon 3 Tbsp plant based butter Salt and pepper, to taste INSTRUCTIONS 1. Peel and slice the plantains, onion and garlic. 2. Shallow fry the plantain slices in a deep pan until golden and cooked through, about 3 minutes on each side. Transfer to a paper towel lined plate to get rid of excess oil. Set aside. 3. Sauté the onion and garlic in the same pan for 5 minutes or until the onion is translucent. 4. Add in vegetable stock and coconut milk. Add in the plantain and all seasonings. 5. Simmer for 5-10 minutes on med-low heat then blend with an immersion blender until smooth. 6. Taste and adjust seasoning to your liking. Serve and optionally garnish with fried plantain slices, pumpkins and rosemary leaves. 7. Enjoy!

Toss in the cooked spaghetti. Mix until well coated. If the sauce seems dry, add the pasta water as needed until the desired consistency is reached. Top with shaved Parmesan. 7. Enjoy!

Recipe by @mymanabites Let’s make a delicious garden-inspired drink! Lavender Mint Mojito Mocktail Ingredients: - Water: 1 cup - Granulated Sugar: 1 cup - Dried Lavender: 2 tbsp - Butterfly Pea Flowers (optional for color change): 1 tbsp - Fresh Mint Leaves - Lime, quartered - Ice - Sparkling Water Lavender Simple Syrup: 1. Combine 1 cup each of water and sugar, 2 tbsp dried lavender, and optionally, butterfly pea flowers, in a saucepan. Heat until sugar dissolves. 2. Simmer for 1 minute, then remove from heat. Steep for 30 minutes for flavor and color. 3. Strain and cool. Store extra in the fridge. Lavender Mint Mojito Mocktail: 1. Muddle fresh mint and lime quarter in a glass. 2. Add 2-3 tbsp lavender syrup. 3. Top with ice and sparkling water. Stir. 4. Garnish with mint or lime. Enjoy your vibrant mocktail! Note: To add an enchanting color change add the butterfly pea flower at the end, steep 1 tbsp of butterfly pea flowers in 1 cup of water, strain, and cool. The acidity of the lime will change the color of the drink from a beautiful blue to a delightful purple, adding an element of magic to your beverage. Have you tried a drink with lavender in it?

@typhaniecooks Celebrate Jamaica’s Independence Day with @typhaniecooks’ Ackee & Saltfish Seasoned Rice recipe! Ackee & Saltfish is Jamaica’s national dish. Add in rice and kabocha squash (simply referred to as ‘pumpkin’ in Jamaica) for an easy, flavorful, and hearty one-pot cultural dish. INGREDIENTS: ½ lb saltfish 1 lb (or one can) pre-boiled ackee ½ onion, chopped 4 garlic cloves, minced 2 scallion stalks, chopped (reserve the green parts for garnish) 2 thyme sprigs 1 scotch bonnet pepper 1 cup medium-diced kabocha squash 2 cups (or one can) coconut milk 1 ¼ cup water 1 tsp allspice berries 1 tsp all-purpose seasoning ½ tsp black pepper 2 cups jasmine rice, rinsed 2 tbsp coconut oil 1 tbsp butter INSTRUCTIONS: 1. Boil the saltfish for 20 minutes to reduce the excess salt. Drain and allow the saltfish to cool before flaking. Set aside. 2. In separate pot over medium heat, add the coconut oil. Sauté the onion and scallion for about a minute before adding the garlic. 3. Stir, and after about 30 seconds when the garlic is flagrant, add the flaked saltfish and kabocha squash. Give everything a light stir. 4. Add the coconut milk, water, allspice berries, all-purpose seasoning, and black pepper. Stir, then allow the pot to come to a rolling simmer. 5. Stir in the ackee and rice. Then, add the thyme, scotch bonnet pepper, some of the scallion garnish, and butter. 6. As soon as the pot begins to come to a boil, stir gently, cover, lower the heat, and allow the rice to steam on the lowest heat setting for 25 minutes. Fluff, serve, and enjoy!

Recipe below: Ingredients 1 pineapple, diced 1 (13.5 oz.) can coconut milk 1 (13.5 oz.) can coconut cream 1 (14 oz.) can condensed milk 2 limes ½ tsp kosher salt ¾ cup light rum Preparation Add ¾ of the diced pineapple, coconut milk, coconut cream, condensed milk, zest of 1 lime, juice of both limes, salt, and rum to a blender. Blend until smooth. Divide the remaining diced pineapple between the popsicle sleeves. Fill each popsicle sleeve with piña colada mixture, seal, and then lay flat on a tray. Freeze until frozen, about 6 hours. Snip the tops off and enjoy!

Snack on these umami-rich cereal snacks by themselves or use them in cookies! Ingredients: ¼ cup unsalted butter 6 salted duck egg yolks, softened in the microwave, then mashed Handful of curry leaves, washed and dried 1 heaping teaspoon mushroom or chicken powder Pinch of MSG 6 cups cereal (mix of cornflakes and Rice Krispies cereal - Pinipig works too) Toasted sesame seeds, optional, for topping Preparation 1. Add butter to a large pan over medium heat. Melt and let it brown, stirring occasionally. 2. Add in mashed salted duck egg yolks, curry leaves, mushroom or chicken powder, pinch of MSG, and the cereal of choice. Stir well, and add optional sesame seeds. Remove from heat and spread it out on a parchment-lined baking sheet to cool. 3. Option to bake the cereal for about 10 minutes at 300ºF for extra crispiness. Once cool, store in an airtight container for up to 1 week. It will remain nicely crispy! For my haystacks recipe, check out my cookbook “108 Asian Cookies” that comes out 2025! But I’ll give you a clue, you’ll need nut butter and light corn syrup

INGREDIENTS 4 limes - washed and scrubbed 5 tablespoons of sugar 4 cups of water 1/2 cup of sweetened coconut condensed milk (or regular condensed milk) Ice for serving PREPARATION 1. Cut the limes into eighths. 2. In a blender, pulse the lime pieces with sugar about 5 times. Be careful not to over-blend to avoid bitterness. 3. Strain the mixture using a fine mesh strainer over a pitcher to remove the pulp. 4. Pour the strained mixture back into the blender, add the coconut condensed milk, and blend until well combined. Adjust the sweetness by adding more condensed milk if desired. 5.Serve the lemonade in a large tall glass filled with ice. 6. Enjoy this refreshing, creamy drink!

INGREDIENTS: 5-6 strands saffron 2 tsp warm water 8 oz mascarpone cheese, room temperature 1/2 cup Greek yogurt 3/4 cup mango pulp, chilled 1.25 cups heavy whipping cream, chilled 5 Tbsp powdered sugar 1.5 tsp cardamom powder 2 cups Chai with coconut milk, chilled 1 package ladyfingers 3 mangos, peeled and sliced for topping Optional toppings: crushed freeze-dried mango, mint, rose buds, shredded coconut PREPARATION: 1. Bloom the saffron: Add the saffron strands to 2 teaspoons of warm water and let it steep for 15 minutes. 2. Prepare the mascarpone mixture: In a large bowl, combine mascarpone cheese, Greek yogurt, mango pulp, heavy whipping cream, powdered sugar, cardamom powder, and the bloomed saffron (including the liquid). Using a hand blender, whip the mixture until it thickens and lightens in color, about 5 minutes. 3. Assemble the tiramisu: Choose an 8-inch square dish or six 3½-inch square dishes for assembly. Quickly dip each ladyfinger into the cooled chai with coconut milk, ensuring both sides are coated but not soaked. Place a layer of dipped ladyfingers at the bottom of your chosen dish. Spread half of the mascarpone mixture over the ladyfinger layer. Add another layer of dipped ladyfingers on top of the mascarpone layer. Spread the remaining mascarpone mixture over the second layer of ladyfingers. 4. Refrigerate: Cover the dish and refrigerate for at least 6 hours, preferably overnight, to allow the flavors to meld. 5. Serve: Before serving, dust with crushed freeze-dried mango and top with fresh mango slices. Garnish with mint leaves, rose buds, and shredded coconut if desired.

RECIPE: Key Lime Ice Box Pie 1/3 cup cold water 1/2 Tbsp gelatin 4 eggs, separated 3 Tbsp lime juice (or more, if desired) 1 cup granulated sugar, divided 1/8 tsp salt 1 cup whipped cream, for serving Crust 2.5 cups (315g) all-purpose flour 1 tsp kosher salt 6 Tbsp (85 g) cold unsalted butter 2/3 cups (130 g) shortening 1/2 cups (120ml) cold water INSTRUCTIONS: To make the crust: Combine flour and salt in a medium bowl, whisk to incorporate. Using a pastry cutter or food processor, add the butter and shortening and cut/pulse to pea-sized balls appear in the flour. Gradually add cold water, little by little, until you have a firm, pliable dough that you can roll out. Bake at 400ºF for 15 minutes, or until the crust is golden. Set aside to cool. To make the pie filling: Add gelatin and cold water into a mixing bowl. Set aside and follow chilling instructions on the package. Bring a medium to large pot of water to a simmer for a double-boiling process. Place separated egg yolks, lime juice, and 1/2 cup sugar in a metal mixing bowl large enough to sit on top of the pot. Set bowl over simmering water to start the double-boiling process. Whisk continuously by hand until the curd begins to thicken and the sugar has dissolved. Should develop a creamy texture. Remove from the heat and add into the bowl with set gelatin, mixing with wire whisk until well combined. Whisk the egg whites by hand to soft peaks. Gradually, add the remaining 1/2 cup sugar and whisk until stiff peaks form and your meringue holds a firm, glossy texture. Alternatively, you can use a stand or hand mixer. Be careful not to over whisk. Combine the meringue with your lime curd base by folding gently with spatula. Gently, pour mixture into your baked pie crust. Allow to set in your refrigerator for several hours. When ready to eat you can top with whipped cream or drizzle sweetened condensed milk on top. Enjoy!
