Not only do they offer a Latin fusion menu, it's family-owned and the artwork all around makes you feel like you're somewhere in Latin America. They have one of the most unique dishes I have ever had, which is their chilaquiles torta! There are so many interesting stories about how Latin dishes were invented and created here in the USA, just like the jibarito and the Cuban sandwich. It’s only been a few days since we ate at @cathedralelasvegas inside @arialv but we’ve kinda been thinking about it on the upwards of a hundred times a day. 😌 We were truly so thrilled to dive into a world of French-Mediterranean cuisine and immerse ourselves into the flavors and feel like we were transported to a friend’s kitchen. The architecture and decor added the perfect touch of luxury to our evening. All of the dishes felt so personal and everyone made us feel like we were part of the family. We were blown away by The Omelette appetizer, served with crème fraîche and topped with potato chips, and it’s all we want to eat now. A big thank you to our friends at @taogrouphospitality for having us!

@kasimjhardaway The MOST fudgy, indulgent @drpepper brownies a la mode––plus a Dr. Pepper salted caramel sauce! The base is a high-quality box brownie mix amped up with espresso powder, milk, butter, and of course, DP. Indulge at your own discretion, bby! Ingredients Brownies 1 box brownie mix, preferably Ghirardelli 1 egg + 1 egg yolk ⅓ cup unsalted butter, melted ¼ cup Dr. Pepper 1½ tsp espresso powder 1 tsp vanilla extract 3 Tbsp milk Dr. Pepper Salted Caramel Sauce 2 cups Dr. Pepper 5 Tbsp heavy cream Pinch of flaky sea salt 2½ Tbsp unsalted butter, cold Ice cream, for serving Preparation Make the brownies: Preheat the oven to 325°F (160°C). Line a 9-inch square baking pan with parchment paper or brush with butter. In a medium bowl, combine the brownie mix, egg and egg yolk, melted butter, Dr. Pepper, espresso powder, vanilla, and milk. Pour into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before slicing. Make the Dr. Pepper salted caramel sauce: pour the Dr. Pepper into a saucepan and bring to a boil over medium heat. Reduce the heat to medium-low and simmer for 25-30 minutes, until thickened. Add the heavy cream and whisk until combined, then simmer for 6-8 minutes more. Remove the pan from heat, add a pinch of flaky salt and the cold butter. Whisk until the butter is melted. Chill the caramel for 45 minutes, until thickened. Top the brownies with a scoop of ice cream, the caramel sauce, and another pinch of flaky salt. Enjoy!

@chefblackbeard Pan-Seared Pork Chops with Blackberry Adobo Sauce and Miso Brussels Sprout Slaw Servings: 2 Ingredients Pork Chops 2 8-oz bone-in pork chops Kosher salt, to taste 2 tablespoons neutral oil 2 garlic cloves, crushed 1 cup blackberries 3 tablespoons balsamic vinegar 1 tablespoon soy sauce Freshly ground black pepper, to taste Brussels Sprout Slaw 8 ounces Brussel sprouts ⅓ carrot 1 small shallot ⅓ cup mayonnaise 1 tablespoon white miso paste 1 tablespoon rice vinegar 1 teaspoon granulated sugar Pinch of ground white pepper Preparation -Place the pork chops on a plate and let sit at room temperature for 30 minutes. -Make the slaw: Remove the tough ends from the Brussels sprouts, then cut in half and julienne. Julienne the carrot and shallot. -In a large bowl, combine the mayonnaise, white miso paste, rice vinegar, sugar, and white pepper. Mix well, then add the shredded vegetables. Toss well to coat in the dressing, then set aside. -Season the pork chops on all sides with salt. -Heat the oil in a large pan over high heat. Add the pork chops and sear for 4 minutes on each side. Reduce the heat to medium, then add the garlic. Cook for an additional 2 minutes, until the internal temperature reaches 145°F (63°C). -Remove the garlic and pork chops from the pan and let the chops rest while you make the sauce. Remove any excess oil from the pan. -In a small blender, combine the blackberries, toasted garlic, and balsamic vinegar. Blend until smooth. -Pour the blackberry purée into the pan used to cook the pork chops and cook over medium-low heat, scraping up any browned bits from the bottom of the pan, for 5 minutes, until thickened. Add black pepper and the soy sauce and stir to combine, then remove the pan from the heat. -Slice the rested pork chops, then fan out onto serving plates. Top with a spoonful of the blackberry adobo sauce and plate the slaw alongside. -Enjoy!

@CheatDayEats She's an ICON–Chicken Caesar Salad is having a moment so let’s turn it into a DIP! @cheatdayeats Ingredients Salad Dip 1 cup Caesar dressing ½ cup sour cream ½ cup light mayonnaise 1 tsp Dijon mustard 2 garlic cloves, minced Kosher salt, to taste Freshly ground black pepper, to taste 2 Tbsp fresh lemon juice ¼ cup grated Parmesan cheese 1½ cups cooked and shredded chicken (you can use rotisserie chicken) Salad Topping 2 cups chopped romaine lettuce ¼ cup grated Parmesan cheese ¼ cup croutons, crushed Caesar dressing Fresh lemon juice Toasted garlic butter baguette or pita chips, for serving Preparation 1. Make the salad dip: In a large bowl, stir together the Caesar dressing, sour cream, mayonnaise, mustard, garlic, salt, pepper, and lemon juice. Add the Parmesan and chicken and gently fold until the chicken is coated in the dressing. 2. Transfer the dip to a serving platter and spread in an even layer. 3. For the topping, scatter the romaine, Parmesan, and crushed croutons over the dip. Finish with a drizzle of Caesar dressing and a squeeze of lemon juice. 4. Serve with sliced toasted garlic butter baguette for dipping. (If making ahead, keep the dip and salad topping separate until just before serving.) 6. Enjoy!

Let’s make crawfish onigiri with @groovyfoodiess INGREDIENTS 12 oz cooked crawfish tail meat 2 Tbsp Japanese mayonnaise 1½ tsp wasabi 1 tsp sugar 1 cup cooked rice 1 Tbsp furikake 1½ tsp black sesame seeds 2 sheets nori, split in half (you will only use 3) Preparation 1. In a medium bowl, toss the crawfish with the Japanese mayonnaise, wasabi, and sugar until well-coated. 2. Season the cooked rice with the furikake and sesame seeds. 3. Set an 8-inch square of plastic wrap on a flat surface. 4. Scoop about ⅓ cup of the rice onto the plastic wrap and carefully spread out in a circle, about ¼-inch-thick. 5. Add 2-3 tablespoons of the crawfish stuffing to the center of the rice and use the plastic wrap to help shape the onigiri into a ball or triangle shape, completely encasing the crawfish with the rice. 6. Unwrap the plastic wrap, then wrap a half-sheet of nori around the rice ball. Repeat with the remaining ingredients to make 3 onigiri total. 7. Serve immediately. 8. Enjoy!

Here I’m making a very simple coconut-based tapioca dessert topped with nata de coco and avocado. Canned coconut milk Sugar Tapioca pearls Nata de coco (coconut jelly) Diced avocado Ice In a small saucepan, combine the coconut milk and a few spoonfuls of sugar, depending on your taste preference. Bring to a simmer over low heat and cook for about 5 minutes, stirring to dissolve the sugar. Pour the coconut syrup into a bowl and transfer to the refrigerator to cool. Gently boil the tapioca pearls until tender, then drain and rinse to remove the starch. Add nata de coco, tapioca, and avocado to a dessert bowl, then pour in the coconut syrup. Add a few pieces of ice to keep it cold and enjoy!

Sorry, I left it in the oven too long. The Macintosh apples turned to an extremely delicious apple sauce. I used to make the apples in a separate pan and take them out sooner.
My Menu Plans
I'm beginning to plan my dishes for the holidays. I don't need to test the recipes because I make them for most holidays. However, my memory is slipping, so it probably would be a good idea to do some test baking. I really do need to check baking times.
I first posted this photo in 2011, and I have baked these foods in this oven each year since.
This year I will remember to bake the apples separately, to check them frequently, and to take the remaining ones out when they are done. It's good to bake a bunch of each item in their pan so you can take out one at a time to taste. Also, You can keep the remaining ones in the fridge and reheat as needed. They keep well.
This year I must remember to take note of the best baking times for the apples, the acorn squash, and the yams!!
Asher, at the 5th Street Deli, makes marvelous Moroccan Baked Salmon. I think I will order a platter of that too. It's always delicious!

INGREDIENTS Soup Base -1 cup water -½ Tbsp dashi stock powder -2 Tbsp mirin -2 Tbsp sake -3 Tbsp soy sauce -2 Tbsp sugar Gyudon -½ large yellow onion, thinly sliced -1 lb thinly sliced beef -½ cup sliced green onions, divided -3 cups cooked rice -2 Tbsp fried garlic -2 onsen eggs -2 Tbsp sesame seeds -2 Tbsp chili crisp oil Preparation 1. Make the soup base: In a medium bowl, combine the water, dashi stock powder, mirin, sake, soy sauce, and sugar and stir until the solids are fully dissolved. 2. Make the gyudon: Pour the soup base into a large pan over medium heat, then add the sliced onion and beef. Cover, bring to a simmer, and cook for 3-5 minutes, until the beef starts to cook through. 3. Uncover the pan, skim off any scum from the surface, and continue to boil for about 4 minutes, until the liquid thickens just slightly. Stir in ¼ cup of the green onions. 4. Add the rice to serving bowls, then ladle in the beef and soup mixture. Top with the remaining green onions, fried garlic, onsen eggs, sesame seeds, and chili crisp. 5. Enjoy!

@groovyfoodiess Let’s make one of my favorite dim sum items INGREDIENTS -1 12-ounce package of wonton wrappers -2 pounds raw shrimp, peeled and deveined -¼ cup chopped green onions, plus more for garnish -1 Tbsp soy sauce -1 Tbsp fish sauce -1 tsp kosher salt -1 tsp freshly ground black pepper -1 tsp sugar -1 large egg -2 Tbsp rice flour -4 cups vegetable oil -Sweet chili sauce, for dipping Preparation 1. Finely chop the shrimp, then add to a large bowl with the green onions, soy sauce, fish sauce, salt, pepper, and sugar. Mix well. Add the egg and rice flour and stir; the mixture should thicken a bit. 2. Use a sharp knife to shred the wonton wrappers into ½-inch-wide strips, then transfer to a separate large bowl. 3. Scoop 2 tablespoons of the shrimp filling into the bowl with the shredded wrappers and pat firmly to cover the filling completely. Repeat to make about 6 balls total. 4. In a large pot, heat the vegetable oil over medium-high heat until the temperature reaches 350°F (180°C). 5. Working in batches, fry the shrimp balls in the hot oil for 5-6 minutes, or until the internal temperature reaches 145°F (63°C). 6. Serve immediately with sweet chili sauce alongside for dipping. 7. Enjoy!

@WinnyHayes These air-fried BBQ Chicken drumsticks are so delicious and simple to make. Cook up a batch and serve with potato salad or baked beans, or shred the meat for a quick salad. Ingredients BBQ Rub ⅓ cup brown sugar 2 tsp kosher salt 2 tsp black pepper 2 tsp garlic powder 2 tsp onion powder 1 tsp dry mustard 1 tsp chili powder 2 Tbsp smoked paprika Drumsticks 8 chicken drumsticks 2 tablespoons neutral oil BBQ Sauce 1 cup ketchup ⅓ cup molasses ½ cup brown sugar 2 Tbsp apple cider vinegar 1 Tbsp Worcestershire sauce 1 tsp liquid smoke 1 tsp smoked paprika 1 tsp garlic powder 1 tsp chili powder 1 tsp kosher salt ½ tsp black pepper ½ tsp cumin Preparation 1. Make the BBQ rub: Add the brown sugar, salt, pepper, garlic powder, onion powder, dry mustard, chili powder, and smoked paprika to a medium bowl and mix well. Store in an airtight container in a cool, dry place for up to 3 months. 2. Make the drumsticks: Preheat the air fryer to 400°F (200°C). 3. In a large bowl, toss the drumsticks with the oil and ¼ cup of the BBQ rub until coated evenly. 4. Place the drumsticks in the air fryer and cook, flipping halfway, for 20 minutes, or until the internal temperature reaches 175°F (80° C). 5. Meanwhile, make the BBQ sauce: Add the ketchup, molasses, brown sugar, apple cider vinegar, Worcestershire sauce, liquid smoke, smoked paprika, garlic powder, chili powder, salt, pepper, and cumin to a small pot. Bring to a simmer over medium heat and cook for about 10 minutes, or until slightly thickened. Remove from the heat (if making ahead, let cool completely, then transfer to an airtight container and refrigerate until ready to use, up to 2 weeks). 6. Once the drumsticks are done, brush liberally with the BBQ sauce, then air fry for 5 minutes more to set the sauce. 7. Brush or drizzle the drumsticks with more BBQ sauce and serve with your favorite sides. 8. Enjoy!
