FarmerLynn has added a photo to the pool:
7 cups diced potatoes (about 5 red potatoes)
1 onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 1/2 cups cooked black beans (or drained 15oz can)
1 tsp garlic powder
1/4 tsp pepper
Salsa, Hot sauce, ketchup, or enchilada sauce (optional toppings)
Boil potatoes until tender. Drain and set aside. Saute onions in a couple TBSP of water until tender. Add red and green peppers and potatoes. Cook until peppers are tender. Add black beans, garlic powder, and pepper and warm through. Serve with any desired optional toppings (this is ketchup and a few dabs of sriracha).
Makes 6 servings. 200 calories, g fat, 35mg sodium, 43g carbs, 8g protein
