Super simple and doesn’t need the stand mixer, you can use beaters. 16 oz softened cream cheese 1/2 cup sour cream 1/2 cup sugar 2 eggs 1 tbsp vanilla ~18 Oreos Beat cream cheese, sour cream, and sugar til smooth. Add eggs and vanilla and mix until combined. Add 3 crushed Oreos and mix. Line a muffin tin+ 3 additional cups with cupcake liners, and place a whole Oreo in each tin (this gave me 15 total mini cheesecakes). Pour batter into each cup. Bake on middle rack at 275F for 22-28 minutes, until the top is no longer glossy and jiggly. Cool completely, then refrigerate at least 3 hours. Top with whipped cream (optional) enjoy!

Recipe (Lauren recommends skipping the salt) Ingredients: - 2 cups of red chili peppers (about 8-10 peppers) - 1/4 cup of garlic, minced - 2 tablespoons of sugar - 2 tablespoons of salt - 2 tablespoons of white vinegar - 2 tablespoons of tomato paste - 1 tablespoon of fish sauce - 1/2 teaspoon of freshly ground black pepper Instructions: 1. Begin by washing and deseeding the chili peppers. Cut them into small pieces. 2. In a large bowl, combine the chili peppers, garlic, sugar, salt, white vinegar, tomato paste, fish sauce, and black pepper. 3. Using a blender or food processor, blend the ingredients to a smooth paste. 4. Transfer the paste to a medium saucepan and bring to a boil over medium heat. 5. Reduce the heat and simmer the sauce for 10 to 15 minutes. 6. Remove the saucepan from the heat and let it cool completely. 7. Transfer the cooled sauce to a jar and store in the refrigerator for up to two months. Enjoy!

I decided to use my crab rangoon dip recipe as the filling, which tasted delicious, but didn’t hold up well in the oven. So, next time, I’ll add less Kewpie mayo for a thicker consistency. Overall, I was happy with the results and can’t wait to try this recipe again!

My Favorite Smoothie

I’ve tried a LOT of smoothie recipes through the years and this has become my old standby. It’s tasty and uses mostly frozen items so it’s easy to always have on hand.
2 cups frozen mixed fruit (this is pineapple, strawberries, peaches, and mango)
1 cup frozen mixed veggies (this is Normandy blend)
1/4-1/2 cup frozen spinach
water to cover (optionally use part apple juice to sweeten)
Optional add-ins: TBSP ground flax, amla powder, and/or chia seeds

Breakfast Hash
FarmerLynn has added a photo to the pool:
7 cups diced potatoes (about 5 red potatoes)
1 onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 1/2 cups cooked black beans (or drained 15oz can)
1 tsp garlic powder
1/4 tsp pepper
Salsa, Hot sauce, ketchup, or enchilada sauce (optional toppings)
Boil potatoes until tender. Drain and set aside. Saute onions in a couple TBSP of water until tender. Add red and green peppers and potatoes. Cook until peppers are tender. Add black beans, garlic powder, and pepper and warm through. Serve with any desired optional toppings (this is ketchup and a few dabs of sriracha).
Makes 6 servings. 200 calories, g fat, 35mg sodium, 43g carbs, 8g protein

Add your protein of choice to make it more balanced–I’m keeping it low-budget with a savory marinated egg. Ingredients (serves 1 hungry student) -6 oz dried knife-cut noodles Sauce -1Tbsp red pepper flakes, or 2 Tbsp if you’re feeling spicy -4 garlic cloves, minced -3 scallions, green parts only, thinly sliced -1½ Tbsp sugar -1 Tbsp curry powder -1 Tbsp soy sauce -1½ Tbsp black vinegar -1 tsp dark soy sauce -1 tsp sesame oil -⅓ cup neutral oil, very hot For Garnish (optional) -1 egg, fried or boiled -1 Tbsp fried onions or garlic -Fresh cilantro leaves, torn -1 scallion, very thinly sliced lengthwise -White or black sesame seeds -Chili oil Preparation Cook the noodles according to the package instructions, then drain. I cooked mine a little under to keep the chew and bounce! Make the sauce: In a medium heatproof bowl, combine the red pepper flakes, garlic, scallions, sugar, curry powder, soy sauce, black vinegar, dark soy sauce, and sesame oil. Pour in the hot oil and enjoy the sizzle! Add the noodles to a large serving bowl, pour the sauce over, and toss until well-coated. Top with your favorite garnishes. Enjoy!

Congee, or rice porridge, is a classic Asian comfort food that’s often eaten for breakfast or when under the weather. It’s a very simple dish that traditionally takes at least an hour to prepare, but this hack allows you to make congee in just about 20 minutes. The secret is freezing uncooked rice overnight, which helps the rice break down much faster during cooking. I’m using jasmine rice, but any white rice will work–each variety will give you a slightly different congee consistency. Wash, rinse, and drain the rice, then place in a zip-top bag and freeze for at least 8 hours. Add chicken broth (or your broth of your choice) to a soup pot, along with garlic, ginger, and the frozen rice. Bring to a boil, then cover and simmer for about 15 minutes, or until the rice has reached your desired consistency. If too much broth has evaporated, add a splash or two of water to loosen the congee. Season with salt, pepper, and fish sauce and serve with your favorite toppings. Ingredients ½ cup uncooked jasmine rice 2½ cups chicken broth Kosher salt, to taste Freshly ground black pepper, to taste Fish sauce, to taste For Serving Soft-boiled eggs Sesame oil Chili oil Sliced scallions

Spaghetti And Vegetable Salad

I just added some plain spaghetti pasta to my salad recipe:
Sweet Corn and Salad Recipe:
1. Take two ears of fresh corn 🌽 and husk them.
2. Slice off the corn kernels
3. Peel and dice one red onion.
4. Dice one handful of red and green Bell pepper sections.
5. Dice one large Jalapeño pepper.
6. Place everything into a medium bowl and mix.
7. Add the contents of one 14.5-ounce = 411-gram can of diced fire-roasted red tomatoes.
8. Add fresh herbs from the garden, such as basil leaves and flowers or nasturtium leaves and flowers.
9. Mix everything together.
10. Serve or keep cool in the refrigerator.
Note: It’s delicious as is. Or you can add some vinegar, such as cider vinegar, balsamic vinegar, or plain white vinegar, to taste.
