4 cups broth
2 cups plant milk
4 yukon gold potatoes, diced
3 carrots, chopped
1/2 onion, chopped
1 cup frozen corn
1 tsp thyme
1 tsp dill
1 tsp pepper
2 tsp miso
1 1/2 cups cooked white beans (or drained 15oz can)
1/3 cup oats, blended into flour
Add all ingredients except beans and oat flour to a soup pot. Simmer about 20 minutes until potatoes are tender. Turn off heat and stir in beans and oat flour.
Makes 8 servings. 199 calories, 2g fat, 100mg sodium, 39g carbs, 8g protein
