FarmerLynn has added a photo to the pool:
1 onion, diced
4 mushrooms, diced
1 roma tomato, diced
2 cloves garlic, minced
14oz package extra firm tofu, frozen, thawed, drained, pressed, and crumbled
1 TBSP lemon juice
1 tsp turmeric
2 TBSP Fresh Jax Tofu Scramble Seasoning
Garnishes: scallions, cilantro, minced jalapeno, diced avocado (optional)
Side: 3 potatoes, cut into wedges, boiled until tender and air fried until crispy (optional)
Saute onion until tender. Add mushrooms and cook until tender. Add tomatoes and garlic and cook several more minutes. Add tofu, lemon juice, turmeric, and fresh jax. Stir together until well combined and warm through. Serve with desired garnishes and optional side of potatoes.
Makes 3 servings. 20 calories, 9g fat, 508mg sodium, 13g carbs, 7g protein
