SOUR CREAM
1/2 cup cashews
1/2 cup silken tofu (or blended white beans)
2 TBSP lemon juice
1 TBSP apple cider vinegar
1 tsp garlic powder
1 tsp onion powder
1 tsp white miso
CASSEROLE
5oz mushrooms, diced
1/2 cup onions, diced
3 cups broth
1 TBSP nutritional yeast
2 tsp parsley
1 tsp lemon juice
1/4 tsp pepper
8 oz pasta
Add SOUR CREAM ingredients to a blender and blend until smooth, adding a bit of plant milk to thin enough to blend, if needed. Set aside. In a soup pot, combine all CASSEROLE ingredients and simmer for 10 minutes. Add pasta and cook until tender. Turn off heat and stir in 1/2 cup of SOUR CREAM.
Makes 4 servings. 328 calories, 10g fat, 69mg sodium, 52g carbs, 16g protein
