FarmerLynn has added a photo to the pool:
1 cup diced onion
3 cloves garlic, minced
1 head cauliflower, diced
2 russet potatoes, peeled and diced
5 cups broth
1 tsp thyme
1 tsp oregano
1 tsp umami seasoning (Takii or Yondu)
1/2 tsp pepper
1/2 cup cashews, soaked
In a soup pot, saute onions in a couple TBSP water until almost tender. Add garlic and cook another minute. Add cauliflower and potatoes and saute 5 minutes. Add remaining ingredients, except cashews, and simmer 10 minutes or until potatoes are tender. Blend in batches in a steam safe blender like a Vitamix. Blend cashews with 1/2 cup water and stir into soup.
Makes 6 servings. 129 calories, 4g fat, 119mg sodium, 20g carbs, 5g protein
