Dr. Gregor suggests cooked greens every day. I've been buying a Power Greens Mix and getting it in most days, and decided to grow my own mix this year....it's just young leaves of spinach, swiss chard, and kale. I planted them about 6 weeks ago and they are now ready to be picked for baby greens :)
My favorite method is boiling until wilted and draining. I lightly squeeze out the water and toss with some balsamic vinegar. It'll last in the fridge so you can make multiple days worth. I serve sprinkled with some Eden Shake.
