Sweet Potato Lemon Bars
FILLING
3 cups of sweet potatoes
1/2 cup lemon juice
1/2 cup plant milk
1/2 cup sweetener
Zest of one lemon (optional)
CRUST
1 1/2 cup rolled oats
8 pitted dates
1 TBSP lemon juice
1 TBSP plant milk
1 tsp vanilla extract
Zest of one lemon (optional)
Pierce sweet potatoes and microwave about 5 minutes, until tender. (Don't bake them, or the sweet potato flavor becomes overwheling) Remove skin when cool enough to handle. Add to blender with remaining FILLING ingredients and blend until smooth. In a food processor combine CRUST ingredients and process until you can pinch together mixture. Press crust into the bottom of a 9x9 baking dish. Pour filling on top and freeze several hours.
Makes 9 servings.
