FarnerLynn has added a photo to the pool:
4 slices whole grain bread
2 TBSP dijon mustard
1 avocado, peeled and pitted
2 tsp lemon juice
Pinch cayenne pepper
1/4 tsp ground pepper
2/3 cup spicy sprouts (or microgreens)
4 slices tomato
Spread the dijon mustard on 2 slices of bread. In a small bowl, combine avocado, lemon juice, cayenne, and pepper and mash with a fork. Spread mixture on two remaining slices of bread. Top with sprouts, tomatoes, then the slices of mustard bread.
Makes 2 sandwiches.
