Ingredients:
600g rhubarb
2 Granny Smith apples, peeled, cored & cut into large chunks
Seeds of a vanilla pod (or 1 tsp vanilla bean paste)
120g caster sugar
For the topping:
150g plain flour
1 tsp baking powder
90g caster sugar
90g unsalted butter, chilled and diced
70-100ml whole milk
Method:
#Pre-heat oven to 200C/Gas 6. Wash & dry rhubarb, and cut into 4 cm pieces. Put the apple and rhubarb mix into a baking dish.
# Add the vanilla seeds or paste and sugar, mix well with fruit
# Make topping by stirring together the flour, baking powder, salt & sugar in a large bowl.
# Add the cold cubed butter and mix until it resembles fine breadcrumbs. Add the milk little by little to make a soft, thick batter,
# Dollop the batter in large tablespoons over the top of the fruit.
# Bake for 35-40 minutes until the topping is golden. est that the cobbler is fully baked and add another few minutes in oven if required.
~Serve with custard.
