Vegetable Fried Rice

Vegetable Fried Rice

100g rice
100g savoy cabbage
100g Chinese broccoli (A.K.A. broccolini, A.K.A. tenderstem broccoli)
50g shallot
30g edamame
20g meat free mince
1g turmeric
1g ginger
1tsp soy sauce
salt and pepper to taste

Method is simple: stir fry the shallots first in a couple of tablespoons of water until clear or caramelized. Add the edamame and meat free mince until heated, then add your seasoning followed by the raw ingredients and stir fry quickly until the broccoli is bright green. Set aside with the lid on the pot for three minutes then serve immediately.
