Imagined Lunch

For several days I've been imagining a combination of ingredients I had in the fridge, trying to figure out what to do with them. This is what I came up with: a couronne of roasted vegetables surrounding a bed of braised red cabbage nesting a poached egg.

I'm sure you have your own favourite recipes for all of these, but mine were:

ROASTED VEGGIES: sweet potato, butternut squash, red potato, cucumber, and cauliflower, all in bite-sized pieces.

Marinate in a sauce of lemon juice, olive oil, a clove of garlic squished in a garlic press, chopped fresh Rosemary, Maggi seasoning, a bit of soy sauce, salt & pepper, for as long as you can. Add other seasonings as you like: Ozzie Outback would be good, as well as thyme. Toss frequently while you're preparing the rest.

Preheat your oven to a fairly high temperature (450°F/230°C), and when you're ready to cook, spread the vegetable chunks into your oven-proof thingy (I like glass, but metal would be fine, I suppose) that you've coated with a bit of oil (I use olive). Cook for about 40 minutes, maybe? I cook for about 30 minutes covered, then uncover for the last 10 so the veggies get a bit browned.

CABBAGE: Prepare ±1cm radial slices of the red cabbage, then cut into ±2 cm strips. Finely dice some celery. Prepare a sauce of your liking; I used dark soy sauce, Maggi, red wine, sherry, a splash of Mirin, several vinegars, a bit of crushed garlic, ground coriander, and a couple of teaspoons of whole grain mustard.

Put some caraway seed in a 'fait tout' or other deep skillet, roast it (dry); remove it from the heat and add a big dollop of butter, some macadamia oil and sesame oil, and the celery. When things have settled down a bit, put back on the heat and add the red cabbage, and sauter for several minutes, stir frying. Pour in the sauce, and let it braise and reduce, for at least 20-30 minutes, until the cabbage is tender. Add water if the sauce has reduced and the cabbage isn't tender.

Poach an egg for each serving (I used this poacher: http://www.youtube.com/watch?v=d0cUTyO6zS8, but any method would work.)

Make the 'nest' of cabbage in the centre of a warmed plate, surround it with the roasted veggies, put the egg in the 'nest', and top with chopped garlic chives...

Enjoy!
