This grilled ratatouille is much faster than the traditional stove-top version, and makes for an easier cleanup as well. The veggies—zucchini, eggplant, bell peppers, onions, and tomatoes—are paired with simple grilled chicken breasts for an easy meal that's low in fat and calories but big on nutrition and flavor. Eggplant contains phenolic compounds, potent antioxidants that can help reduce elevated cholesterol levels and also give the plant its characteristic bitter flavor. For an all-grilled meal, warm some bread on the grill and toss fresh fruit such as pineapple rounds or halved peaches on the barbie for dessert.
