Not really much of a real recipe... but easy & fresh.
Caprese Chicken
Trim, salt & pepper chicken. Heat olive oil in medium-med/high skillet. Brown well on both sides. Sauté until chicken is cooked through.
Meanwhile, put oven on broil & move oven shelf to right under the broiler.
When chicken is cooked through, place tomato slices & fresh mozzarella on top. Add cracked pepper. Broil for about 3 minutes or until cheese is melty.... add fresh basil & balsamic dressing.
Easy dressing...
1/2 c olive oil
1/3 c balsamic vinegar
salt & pepper to taste... whisk to emulsify then drizzle over chicken.
Enjoy!!
