marzipan stuffed and topped cupcakes

I am experimenting with making my own marzipan. This batch was better than my first batch because I bought organic white sugar. I am not sure I understand some of these online recipes though, why do they use egg whites? I thought marzipan was unbaked? I used an egg white and then baked with this batch of marzipan (I expected it to melt away but it held up fine). This tasted delicious!



The cupcake was pumpkin with raisins, roasted pumpkin seeds, and black figs.
