European Doughnuts
Ingredients: 1 fresh yeast ¼ l milk, 50g sugar, 500g flour, 25g butter, 2 egg yolks pinch of salt, a glass of rum, for frying 1/2 l good oil.
Apricot or raspberry marmelade to inject.
In milk, add sugar, heat and crush yeast. In a bowl pour the flour add yeast, egg yolks and butter/rum. Knead the dough smooth and whisk until the appearance of bubbles and the dough is not sticking to the bowl. Leave in a warm place to rise for 30 minutes. Put on a board and roll into thick 1.5-2cm, and remove the donuts with the mold diameter 8cm.Leave in worm 1 hour to grow well. Carefully with a large baking spatula inserted into the hot oil. Fry in moderate hot in lot of oil, so they float. Turn after 2 minutes on the reverse side. Should remain a bright ring in the middle. With a pastry syringe inject apricot or raspberry marmalade in the brith ring.
