20231028_i1 Vegan, cheap-ish, proteinaceous, fibrous stew of everything <:D (recipe below) | Gothenburg, Sweden

TW: The metric system! :D

You need:

- A 5 litre pot
- 2 bowls
- Depending on how many people will share the stew: Boxes for freezing some of it
- 1 vegetable stock cube
- 3 cans of large white beans
- 3 cans of chick peas
- 2 cans of crushed tomatoes
- 1 can of corn
- 1 can of mushrooms
- 2.5 dl of vegan cream (e.g. oat cream)
- 280 g of fake meat (in chunks)
- 2 onions
- 2 carrots
- 1 bell pepper
- A few black olives
- Canola oil
- Black pepper
- A shitload of garlic powder
- Powdered beet fibre or the like (maybe a couple of table spoons)
- Soy sauce
- Macaroni, quinoa, or other carb to go with the stew
- Psyllium seeds
- Walnuts

1. Open the cans and packets
2. Pour off bean & corn fluid (save the chick pea fluid for meringues)
3. Chop onions and collect in bowl
4. Chop carrots and bell pepper and collect in other bowl
5. Pour canola oil in the pot
6. Add onions, crumbled stock cube, black pepper, garlic powder, and soy sauce
7. Stir while they sizzle for a few minutes
8. Add tomatoes and stir
9. Let simmer for a while (I don’t actually know, but is 20 min supposed to bring out tomato flavours better? :p )
10. Add beans, chick peas, corn, mushrooms, cream, meat chunks, carrots, bell pepper, olives, and fibre
11. Stir
12. Leave it on the stove just long enough to get warm (no need to overcook the veggies)
13. Serve with brown rice, whole grain macaroni, or the like
14. Sprinkle psyllium seeds and a few walnuts on top
