Makes 4 16oz ramekins 3 tbsp butter 1 tbsp sage 5-6 thyme stems 1 large carrot, diced 1 small onion, diced 1 celery stick, diced 3 cloves of garlic, minced ½ cup flour 1 cup frozen peas 5 cups turkey broth 3 cups leftover turkey (or chicken) 1/4 cup grated Parmesan cheese (optional to add the rind) ¼ cup heavy cream 1 sheet of puff pastry, cut into 4 pieces egg In a large pot, melt the butter over medium heat. Add the herbs, carrots, onion, and celery, and sauté for 5 minutes until the carrots start to soften. Add the garlic and cook for an additional 2 minutes. Stir in the flour and mix to combine. Add the peas, the optional Parmesan rind, and the broth. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 10 minutes. Add the leftover turkey, Parmesan cheese, and heavy cream, cooking for an additional 2 minutes. Ladle the filling into individual ramekins, filling each about three-quarters of the way. Cover each with puff pastry, and cut slits in the top of each. Brush on an egg wash. Bake at 400°F for 10-15 minutes, or until the puff pastry is golden brown.

@vindelgiudice Pork Chops with Caramelized Apple and Onion This fall dish is the perfect combination of sweet and savory. The delicious, caramelized apple and onions are the perfect topping for any meat dish, but pairs so well with seared pork chops, and is a million times better than applesauce. The caramelized apples and onions are so easy to make. I sauté the onions in a cast iron pan on medium heat for about 5 minutes. Then add in the chopped apples with ½ tsp cinnamon, ¼ tsp cardamom, ½ nutmeg, and ½ tsp salt. Let them sauté until they become soft, and the apples start to get a little mushy, about 10 minutes. Then I stir in ⅓ cup of red wine and 1 Tbsp Worcestershire sauce and cover them on medium-low for about 10 minutes, occasionally stirring them. Finally, I add a pat of butter and set it aside to cool. My favorite combination of flavors is sweet and savory. It is the perfect flavor combo for Fall and I guarantee you’ll love it!

The trick is roasting all the aromatics INSIDE the pumpkin! Pumpkin Bisque: 1 medium sugar pumpkin, top sliced off and reserved, seeds scooped out and reserved 1 head of garlic, tops removed 1 jalapeno, cut in half lengthwise 1 medium yellow onion, cut in half lengthwise olive oil kosher salt black pepper 3/4 cup coconut milk, plus more for drizzling pinch of freshly ground nutmeg 1 tbsp Indian Goan Masala or Garam Masala or Curry Powder pomegranate arils for garnish spiced roasted pumpkin seeds for garnish 1. Stuff the pumpkin cavity with the garlic, jalapeño, onion, olive oil, salt, and pepper. Place the pumpkin top with stem back on the pumpkin, and roast at 375F for 60-90 minutes until fork tender. 2. Remove the pumpkin flesh from the pumpkin, the onions from their skins, and the garlic from their skins, then add to a pot, along with the jalapeño. Set over medium heat. Add in coconut milk, nutmeg, masala/curry powder. Stir and simmer for 10-15 minutes. Using an immersion blender, blend until completely smooth. Taste and adjust for salt if necessary. 3. Serve and garnish with pomegranate, crispy pumpkin seeds and a drizzle of coconut milk. Spiced Crispy Pumpkin Seeds Ingredients: Pumpkin seeds thoroughly washed and dried 1 tbsp olive oil kosher salt black pepper 1/2 tsp Indian Goan Masala or Garam Masala 1. Make sure the pumpkin seeds are completely dry. Toss with olive oil, salt, pepper and masala. Spread on a baking sheet/airfryer tray and air-fry for 20 minutes until crispy. 2. Remove and completely cool before serving.

@tappedinwellness SWEET HEAT BLACK BEAN SMASHBURGER Serves: 2 INGREDIENTS: Sweet Heat Chili Sauce ¼ cup avocado oil 2 fresno chilies, chopped 3 serrano chilies, chopped 3 garlic cloves, chopped ¼ cup agave (adjust as needed for desired sweetness level) 2 tbsp apple cider vinegar Salt and pepper, to taste Burger Patty Half a white onion, chopped 1 red bell pepper, chopped 1 cup chopped white mushrooms 1 can of black beans, drained and rinsed ¼ cup of gluten-free oats ¼ cup of ketchup 1 tsp salt 1 tsp pepper 1 tsp smoked paprika 1 tsp garlic powder 1 tsp onion powder 2 tablespoons avocado oil, divided INSTRUCTIONS: 1. To a medium pot, add oil, chilies, and garlic. Cook on medium low heat until softened, about 2 minutes. Add agave, vinegar, and a pinch of salt and pepper. Reduce heat to low, and simmer for 5-10 minutes until the chilies are soft. Set aside. 2. Heat 1 tablespoon of avocado oil in a large pan over medium high heat. Add onions, bell pepper, mushrooms and cook until onions are translucent and the mushrooms have released all moisture, about 5 minutes. 3. Mash black beans in a large bowl with a fork until mixture resembles mashed potatoes with a few beans still intact. 4. Blend oats, salt, pepper, smoked paprika, garlic powder, and onion powder in a food processor until oats are finely ground and spices are incorporated. 5. To the mashed beans, add the sautéed vegetables along with blended spice flour and the ketchup. Mix until combined. Roll into golf ball sized balls. 6. Heat remaining 1 tablespoon of oil in a large skillet over medium heat. Add the balls to the pan, then use a spatula to press them down until flattened. Cook until crispy, flipping halfway through, about 3-4 minutes each side. 7. Build into a burger with toppings of choice and enjoy!

These treats are a delightful way to savor fresh fruit in every bite. Whether enjoyed with coffee or as a snack, they bring a burst of flavor to any moment! INGREDIENTS Dough ½ cup warm milk ½ cup warm water ¼ cup sugar 1 teaspoon salt 1 teaspoon instant yeast ¼ cup unsalted butter, softened 3 cups flour Filing 2 cups blackberries ½ cup sugar 1 lemon, zested and juiced 1 mandarin, zested Assembly: 1 egg, lightly beaten Powdered sugar, for garnish 1 lemon, zested, for garnish PREPARATION: 1. In the bowl of a stand mixer fitted with a dough hook, combine the milk, water, sugar, salt, yeast, butter, and flour. Mix for 6-8 minutes until a smooth dough forms. If the dough remains too sticky after 8 minutes, add an additional 4 tablespoons of flour. 2. Shape it all into a ball, then cover and let it rest for 30 minutes. 3. After 30 minutes, shape the rolls. Divide the dough in half and set one half aside, covered to prevent drying out. Roll the remaining half out to about 1 inch thick, and cut into 2½-inch rounds using a cookie cutter. Place the rounds onto a parchment-lined baking sheet and cover with plastic wrap. Repeat with the remaining dough. 4. Rest the dough for 45 minutes until they are soft and puffy. 5. In a pot over low heat, combine blackberries, sugar, lemon zest, lemon juice, and mandarin zest. Let the berries release their juices, stirring gently with a soft spatula. Simmer on low for 10 minutes until the compote thickens. 6. Preheat the oven to 375˚F (190˚C). 7. When the dough discs are puffy, brush the surfaces with the beaten egg. Use your fingers to make a round indentation in the center of each disc. Fill the centers with the blackberry compote. 8. Bake for 18-20 minutes until golden brown. 9. Garnish with powdered sugar and lemon zest. 10. Enjoy!

In a large pot, add the broth, water, chicken carcass, onion, garlic, ginger, sugar, star anise, cloves, cinnamon stick, and fennel seeds. 2. Bring the mixture to a boil, then reduce the heat, and simmer uncovered for 25-30 minutes to allow the flavors to blend. 3. Skim off any foam or impurities that rise to the surface. Stir in the fish sauce, then season with salt and pepper to taste. Adjust fish sauce as desired for depth and saltiness. 4. Once the broth is rich and fragrant, remove it from heat. Strain out the solids (bones, onion, ginger, and spices). Discard solids, keeping just the clear, flavorful broth. 5. Place a portion of cooked rice noodles in each serving bowl. Add some broth and shredded chicken on top of the noodles, then the herbs, onions, sprouts, lime, and sauces. 6. Enjoy!

20231028_i1 Vegan, cheap-ish, proteinaceous, fibrous stew of everything <:D (recipe below) | Gothenburg, Sweden

You need:
- A 5 litre pot
- 2 bowls
- Depending on how many people will share the stew: Boxes for freezing some of it
- 1 vegetable stock cube
- 3 cans of large white beans
- 3 cans of chick peas
- 2 cans of crushed tomatoes
- 1 can of corn
- 1 can of mushrooms
- 2.5 dl of vegan cream (e.g. oat cream)
- 280 g of fake meat (in chunks)
- 2 onions
- 2 carrots
- 1 bell pepper
- A few black olives
- Canola oil
- Black pepper
- A shitload of garlic powder
- Powdered beet fibre or the like (maybe a couple of table spoons)
- Soy sauce
- Macaroni, quinoa, or other carb to go with the stew
- Psyllium seeds
- Walnuts
1. Open the cans and packets
2. Pour off bean & corn fluid (save the chick pea fluid for meringues)
3. Chop onions and collect in bowl
4. Chop carrots and bell pepper and collect in other bowl
5. Pour canola oil in the pot
6. Add onions, crumbled stock cube, black pepper, garlic powder, and soy sauce
7. Stir while they sizzle for a few minutes
8. Add tomatoes and stir
9. Let simmer for a while (I don’t actually know, but is 20 min supposed to bring out tomato flavours better? :p )
10. Add beans, chick peas, corn, mushrooms, cream, meat chunks, carrots, bell pepper, olives, and fibre
11. Stir
12. Leave it on the stove just long enough to get warm (no need to overcook the veggies)
13. Serve with brown rice, whole grain macaroni, or the like
14. Sprinkle psyllium seeds and a few walnuts on top
