Firecracker Shrimp
@groovyfoodiess 3-ingredient party pleaser- Firecracker Shrimp I can promise you that these will be gone before you have a chance to take a bit–kids and adults alike love them. Serve with your favorite sweet chili sauce or sauce of choice :) Ingredients -1 package spring roll paper or spring roll paper -1 large egg -1 Tbsp water -1 lb extra-large shell-on shrimp -2 cups neutral oil, for frying For Serving -½ cup sweet chili sauce -1 bunch fresh cilantro, chopped Preparation Cut the spring roll wrappers in half on the diagonal to create triangles. Beat the egg and water together in a small bowl until frothy. Peel the shrimp and devein, leaving the tails on (they’ll serve as handles for the shrimp). Add the oil to large, high-walled pan and heat over medium-high heat until the temperature reaches 350°F (180°C). Place a shrimp on one side of a spring roll wrapper triangle. Roll tightly toward the other end of the wrapper, keeping the shrimp straight and tucking in any excess wrapper as you roll. Dab a bit of egg wash on the end of the wrapper to seal. Repeat with the remaining shrimp and wrappers. Add the shrimp to the hot oil and fry for 1-2 minutes on each side, or until golden. Drizzle with sweet chili sauce and garnish with cilantro. Enjoy!
