Japanese Fruit Sando
@Sweetportfolio found some Japanese Shokupan (milk bread) at a local bakery and decided to make a fruit sando! For this delicious summer treat, you will need the following: Ingredients 1 loaf shokupan or any other soft bread 1½ cups heavy cream ⅓ cup powdered sugar 1 tsp vanilla extract 6-8 medium strawberries, stemmed and hulled 2 kiwis, ends trimmed, peeled, and quartered Preparation -Cut the bread into 1½-inch-thick slices using a serrated knife. -In the bowl of a stand mixer (or in a large bowl with a whisk), whip together the heavy cream, powdered sugar, and vanilla until medium peaks form. -Spread a layer of whipped cream over a slice of bread, then arrange the strawberries or kiwis on top so the fruit will be revealed when the sandwich is cut diagonally. Cover the fruit completely with more whipped cream, then top with another slice of bread. Spread more whipped cream around the sides of the sandwich until flush with the edges. Repeat with the remaining ingredients to make more sandwiches, then wrap each sandwich tightly with plastic wrap and refrigerate for 1 hour. -Unwrap the sandwiches and use a serrated knife to trim the crusts. Cut the sandos in half diagonally to reveal the fruit, then serve immediately. -Enjoy!
