I made this today and really enjoyed it. Though, both Stu and I felt it was a bit sweeter than we'd like. I used golden Monk Fruit Sugar in this recipe. I thickened it with Arrowroot Flour, I prefer it over cornstarch. I'll cut back on the sugar by 1/3 next time I make it and I plan to make it again. It would be good with some fruit in it too.

Sweet Potato Lemon Bars
FILLING
3 cups of sweet potatoes
1/2 cup lemon juice
1/2 cup plant milk
1/2 cup sweetener
Zest of one lemon (optional)
CRUST
1 1/2 cup rolled oats
8 pitted dates
1 TBSP lemon juice
1 TBSP plant milk
1 tsp vanilla extract
Zest of one lemon (optional)
Pierce sweet potatoes and microwave about 5 minutes, until tender. (Don't bake them, or the sweet potato flavor becomes overwheling) Remove skin when cool enough to handle. Add to blender with remaining FILLING ingredients and blend until smooth. In a food processor combine CRUST ingredients and process until you can pinch together mixture. Press crust into the bottom of a 9x9 baking dish. Pour filling on top and freeze several hours.
Makes 9 servings.
