6 digestive biscuits, crushed to fine crumbs
Ready made caramel sauce (I used salted caramel)
2 bananas, sliced
300ml double cream
100ml crème fraîche
1 tbsp icing sugar
Chocolate flake, chopped into 4 small ‘logs’ and the rest crumbled
Put about 1 heaped tbsp of the biscuit crumbs into 4 serving glasses.
Very gently warm the caramel sauce so that it loosens slightly then spoon a layer on top of the biscuits. Sprinkle lightly with biscuit crumbs then add a layer of banana and the rest of the biscuit crumbs.
Put the cream, crème fraîche and icing sugar into a large bowl and whisk to just between soft and firm peaks. Spoon the cream mixture into the pots.
Sprinkle each with crumbled chocolate and place a little chocolate log in the centre of each.
