Sweet on Sweet Potatoes | Struggle Meals
Who knew sweet potatoes were not only cheap, but versatile? Frankie did, and now you do too. RECIPES: Sweet Potato Bun Sliders With Fries Ingredients • 3 large sweet potatoes (1 ½ pounds), about 2 inches thick in the middle • 3 tablespoons extra virgin olive oil • 1 teaspoon kosher salt • ½ teaspoon ground pepper • 1 pound ground beef (85% lean) • 1 large egg • 1 small onion, grated • 1 tablespoon yellow mustard • 1 tablespoon soy sauce • 1 teaspoon kosher salt • ½ teaspoon black pepper For garnish: • Green leaf lettuce Steps 1. Make the sliders - Preheat oven to 425 degrees. 2. In the thickest part of the sweet potatoes, cut 12 half inch thick rounds. Reserve ends for fries. Cut skinny strips from the reserve ends to resemble fries. 3. On a baking sheet tray, place discs and fries. Drizzle with oil and reserve some for the burger patties, then season with salt and pepper. Roast for 30 minutes, flipping halfway through. 4. In a large bowl, add ground beef, onion, mustard, egg, soy sauce, salt, and pepper. Gently combine well but careful not to over mix. 5. Scoop out about a third of a cup of beef and shape into a patty. In a large cast iron, add reserved oil. When hot add sliders, cook for 3 minutes, flip and place in oven to finish cooking. 6. To assemble - On a plate, add sweet potato round, top with slider, mayo, and ketchup. Top with another cooked potato round. Serve with the reserved sweet potato fries. Baked Sweet Potato Skins Ingredients • 4 medium sweet potatoes, scrubbed • 1 tablespoon butter, melted • ¼ cup half and half • 1 teaspoon kosher salt • ½ teaspoon ground black pepper • 1 cup cheese, shredded and divided • 1 cup broccoli florets, small chopped and blanched • 2 strips bacon, cooked and chopped • 1 cup chicken breast, cooked and a half in cubed • 2 tablespoons plain yogurt • 2 green onions, chopped Steps 1. Preheat oven to 425 degrees. 2. Cut potatoes in half lengthwise. On a baking sheet tray, add sweet potatoes and cover with foil. Bake for 45 to 50 minutes, until easy to pierce with a fork. 3. In a bowl, scoop out sweet potato flesh, making sure to leave a thin layer of sweet potato inside the skin. 4. On the same baking tray, place skins face up. Bake for 10 minutes, until slightly crispy edges. 5. In the bowl filled with sweet potatoes, add milk, butter, a quarter of cup shredded cheese, salt, and pepper. Mash until smooth and creamy. 6. Next, remove sweet potato skins from oven, and fill with sweet potato mixture. Top with chopped bacon, chicken, broccoli florets, and remaining cheese. Bake for 5 minutes until the cheese is melted. 7. Remove from the oven. Drizzle with yogurt and green onion on top. Serve. Sweet Potato Noodles with Turkey Meatballs Ingredients • 1 slice bread • 3 tablespoons half and half • 1 pound ground turkey breast, dark meat • 1 egg • 2 cloves garlic, minced • ½ yellow onion, finely chopped • ½ cup fresh spinach, finely chopped • 1 teaspoon kosher salt • ½ teaspoon pepper • ¼ cup canola oil For the pasta: • 2 large sweet potatoes, peeled For the sauce: • ½ cup almond butter • ½ to 1 cup hot water • 1 jalapeno, seeded and chopped • 1 lemon, juiced • ½ teaspoon kosher salt • 3 tablespoon parsley, chopped • 1 teaspoon garlic powder Steps 1. Preheat oven to 400 degrees. 2. Make the meatballs - In a large bowl, add bread and milk, and let sit for 5 minutes. Next, add turkey, egg, garlic, onion, spinach, salt, and pepper. Combine well but do not over mix ingredients. 3. With the mixture, form into bite-sized meatballs. On a baking sheet tray, place each meatball. 4. In a cast iron, heat up oil. Working in batches, brown meatballs on all sides, about 4 to 6 minutes. Remove to the sheet tray, and finish cooking in the oven for 10 to 15 minutes. 5. Make the pasta - With a vegetable peeler, peel thin strips of sweet potatoes. To make the noodles, make sure you’re turning the sweet potatoes after each peel. 6. In a cast iron on medium heat, add almond sauce, hot water, jalapeno, garlic powder, lemon juice, and salt. Stir until heated. 7. In a pot, add water and salt then bring to a boil. Toss in sweet potato pasta and stir. Cook for 1 to 2 minutes. Strain into the saucepan, adding water if needed. 8. To assemble - Next, toss in pasta, just to warm up. Plate the pasta and top with meatballs. Garnish with parsley, and serve.
