I haven't really got a recipe for this, some rowan berries - washed, some windfall apples - wash, cut out wormy bits and bruises but otherwise just chop and throw in a large pan with rowan berries.
Add water, just enough to cover fruit, cook till mushy.
Strain overnight through a jelly bag.
Measure resulting liquid, for every pint of liquid add 1 pound of sugar.
Cook till reached jam temperature or a drop on a saucer wrinkles when pushed with your finger.
Eat with meat or cheese.
It's a sort of traditional English accompaniment equivalent to cranberry jelly.
