This is where the Far East meets Kansas barbecue and turns up in the Pacific Northwest. Makes enough sauce for 4 rib racks, and left overs freeze well as needed. In a medium size saucepan bring the following to a boil, then lower temperature and simmer 10 minutes. Pour off into lidded jars when cool.
8 garlic cloves crushed
1-2 tsp. Hickory smoke salt
1 bottle off-the-shelf barbecue sauce your favorite I like ones with honey on the labels
2 cup honey
1 small bottle Hoisin sauce
½ cup soy or teriyaki sauce
½ cub bourbon
¼ cup Worcestershire sauce
¼ cup of a favorite steak sauce
2-3 TBS. fresh ginger, ground in spice mill
