Inspired by the E.F Benson books this recipe came about because of the old adage 'one good turn deserves another'. Andy moved some livestock to help a neighbour, who just happens to be a fishmonger/fisherman. These fresh natural ingredients need very little added but I thought back to a recipe I had used many years ago and which was very apt for West Coast Normandie. Our finest ingredient here, apart from seafood and apples, is raw organic dairy and we also grow some of France's best carrots. Add a hint of cheese and there you have it.
