Roasted tricolor cauliflower

Hamburger Helper has added a photo to the pool:

Roasted tricolor cauliflower

Green, orange, and purple cauliflower were on sale so I bought several heads. These were roasted simply with olive oil, sea salt, and ground black pepper in a 425 degree oven for about 20 minutes.

After cooling, I will toss with some muscat wine vinegar, toasted pine nuts, and the pesto quinoa I made yesterday.
