Mushroom & Parmesan Pasta

Mushroom & Parmesan Pasta

Ribbon Pasta With Parmesan

2 Handfuls of Ribbon Pasta (any pasta can be substituted)
1/2 Tbs Butter
1/2 Tbs Olive Oil
1 Tsp Garlic
Salt & Pepper to taste
2 Cups Mushrooms (I went with shiitake for this)
3 Cups Spinach
Parmesan for garnish

Fill large pan with water, about 2/3 full and bring to rolling boil. Add in pasta and reduce heat to medium.IMG_5611-small

In separate pan over low heat, add butter and oil. Once butter is melted, add the garlic and give it a quick saute. Add mushrooms and cook until tender. Add spinach to pan and cook until wilted.

Cook pasta until al dente. Drain water. Place pasta back into large pot (do not put over heat), and pour ingredients from the saute pan into the large pan. Add a few noodles to the empty saute pan and stir. Re-add them back to the large pot. Toss all items together.

Place on plate and add a sprinkle of Parmesan cheese over top. Serve!
