Avocado Hummus

Avocado Hummus

Ingredients:



1 15oz can of chickpeas/garbanzo beans, drained

3 Tbsp olive oil

3 Tbsp lime juice

2 Tbsp tahini (make sure you stir it up first!)

1 clove garlic, peeled

1/2 tsp kosher salt

2 avocados

1 pinch cumin



Combine the chickpeas, olive oil, lime juice, tahini, garlic and salt in a food processor. Process until smooth and combined, about 1-2 minutes, scraping down the sides as needed.



Add the avocado and cumin. Process for another minute or two (until combined and smooth), adding more olive oil if needed.



Serve topped with a drizzle of olive oil and a light sprinkling of cumin.
