To avoid the cookies sticking too much to the parchment paper, lightly brush oil over the parchment paper, and add the frozen blueberries after you spoon batter onto the baking sheet. 2. Use glutinous rice flour, not regular rice flour. Regular rice flour will not work. 3. Add a little red miso to the batter to add flavor and temper the sweetness. If you love sweeter cookies, add an extra 1/4 cup of sugar to the batter. 4. If the cookie batter is too runny, add more glutinous rice flour, about a tablespoon more at a time, until the batter is the consistency of mashed potatoes.

@katlieu Salmon Rice and Onigiri Rice Cooker recipe episode 1 @katlieu Serves 4-5 Ingredients: 2 cups uncooked short-grain rice 2 tablespoons soy sauce 1 tablespoon mirin dash of MSG 1 tablespoon sesame oil 1 slender sweet potato, washed 1/2 cup frozen peas or edamame 1 pound salmon Barbecue sauce for salmon + seasoning of choice Instructions: 1. Wash the rice in a colander until the water runs clear (or soak rice in a bowl to wash, repeat until water runs clear). 2. Add rice to the rice cooker inner bowl and the correct amount of water, as specified by the rice cooker's manufacturer instructions. Usually it's a 1:1 ratio of rice to water. 3. Add the soy sauce, mirin, MSG, and sesame oil to the water. Add the potato to the center and the edamame or peas. 4. Lay the salmon over the potato and season with barbecue sauce and other seasonings such as salt, MSG, and white or black pepper. 5. Cook for 1 cycle on MIXED setting or regular cook setting. If the potato is still a little hard, poke some holes all over it with a fork and microwave for 2 minutes on HIGH.

@katlieu Matcha Fluffy yogurt recipe @katlieu (no pudding mix, no baking powder needed) (this is not guacamole Ingredients: 1 cup Greek Yogurt 1 tablespoon honey or maple syrup, adjust to taste 1 tablespoon creamy or crunchy peanut butter Optionally, marshmallow root powder (see packaging for serving size, usually 2 small scoops with the scoop that comes in the bag) and 1 teaspoon collagen powder 1 teaspoon matcha powder (or swap out with cocoa powder, or extracts of your choice) Toppings: Fruits and berries of your choice 1 teaspoon hemp seeds (optional) Nuts of your choice Any of your favorite toppings go!! There’s at least 20 g of protein per serving. I split this in half with my mother. Instructions: 1. Mix the yogurt, honey or maple syrup, peanut butter, marshmallow root powder-- if using, and matcha together in a serving bowl until combined and fluffy, a minute. Top with your toppings of choice and enjoy!

BITTER-FREE BRAZILIAN LEMONADE If you’ve ever made Brazilian lemonade and thought, “Why is this so bitter?”—this trick changes everything Zest 3–4 limes, then completely cut the white pith off of the zested limes (it’s the bitter part!). Quarter the limes, and blend them with the lime zest and 4 cups of cold water for 10–15 seconds. Strain it, then blend again with ice and about three-fourths of a 14-ounce can of sweetened condensed milk (adjust to taste). Serve and enjoy! It’s creamy and refreshing. @juanbiteatatime

You can also find milk bread recipes on modernasianbaking.com For the perfect Tangzhong to add to any milk bread recipe 3 tablespoons bread flour ½ cup milk or plant-based milk Stovetop Method: 1. In a small saucepan, whisk together the bread flour and milk over medium heat. 2. Continue to cook, whisking constantly, until the mixture thickens and forms a smooth paste. This should take about 2 to 3 minutes. 3. Once thickened, remove from heat and allow to cool for 5 minutes before adding it to your milk bread dough ingredients. Microwave Method: 1. In a microwave-safe bowl, whisk together the bread flour and milk until smooth. 2. Microwave in 20-second intervals, stirring in between, until the mixture thickens to a paste-like consistency. 3. Allow the Tangzhong to cool before adding it to your milk bread dough. For a delicious ube halaya miso butter recipe to pair with milk bread: Ingredients: 4 tablespoons unsalted butter, softened 2 tablespoons ube halaya 1 teaspoon red miso 1. @cooksbya Enjoy this easy and quick pesto pasta recipe! A perfect recipe for summer! Ingredients: • ½ of a yellow onion, diced • 3 garlic cloves, minced • Small shallot, diced • Chicken cutlets (full recipe on @cooksbya Instagram page) • 1 tablespoon unsalted butter • 1 tablespoon good quality olive oil • ¼ teaspoon smoked paprika • ½ teaspoon garlic powder • ½ teaspoon onion powder • ½ teaspoon dried oregano • ½ teaspoon crushed red pepper flakes • ¼ teaspoon kosher salt • ½ cup chicken stock • ½ cup pesto* (see note) • 1/3 cup heavy cream • 3 servings of rigatoni pasta • Grated Parmesan cheese • Shredded mozzarella *Note: try to find pesto with minimal ingredients or make your own at home! Directions: 1. In a large pot, bring your water to a boil and salt heavily. 2. Add your rigatoni pasta and cook until al dente, according to package instructions. 3. In a large skillet over medium heat, add your butter and olive oil. Allow the butter to melt. 4. Add your diced yellow onion and shallot to your skillet. 5. Cook until onions have softened, for about 3 minutes. 6. Add your seasonings and minced garlic. 7. Cook until garlic becomes fragrant, about 2 minutes. 8. Add your chicken stock and reduce to about 25% liquid (see video for reference). 9. Add your pesto and heat for 1-2 minutes. 10. Add your heavy cream and turn down the heat to low. 11. Add 2 tablespoons of pasta water and your cooked pasta. 12. Mix everything together and add your parmesan cheese and mozzarella, measure with your heart!! :) 13. Turn heat off and serve with more Parmesan cheese and your crisp chicken cutlets.

Try this recipe by @typhaniecooks INGREDIENTS: Jerk Marinade: ½ yellow onion 4 garlic cloves 2 scallion stalks 1 tbsp fresh thyme leaves 2 scotch bonnet peppers (remove seeds for less spice) ½ tbsp ginger paste 1 tsp allspice berries ¼ tsp cinnamon ¼ tsp nutmeg ½ tbsp all-purpose seasoning ½ tbsp turbinado sugar 1 tbsp vegetable oil 1 tbsp soy sauce Juice of ½ lime Juice of ½ orange 1 tsp browning sauce ¼ tsp liquid smoke Salmon: 1 lb skinless salmon fillets 2 tbsp finely diced red bell pepper 2 tbsp finely diced green bell pepper 1 tsp seafood seasoning 1 egg ¼ cup bread crumbs Lemon-Garlic-Herb Aioli: ¼ cup mayonnaise 2 garlic cloves, grated 1 tbsp finely chopped parsley 1 tbsp finely chopped tarragon Juice of ½ lemon ¼ tsp salt 2 tsp Worcestershire sauce Additional Ingredients: 4 brioche burger buns Butter spread for the burger buns INSTRUCTIONS: 1) Add all of the ingredients for the jerk marinade to a blender. Blend until almost smooth, but still slightly chunky. 2) Use a knife or a food processor to finely chop the raw salmon fillets. 3) In a medium bowl, combine the chopped salmon, 2 tbsp of the jerk marinade, diced bell peppers, seafood seasoning, egg, and bread crumbs. Use your hands to mix well. 4) Divide the seasoned salmon into 4 even portions, and shape into burger patties. Allow to set in the refrigerator for 30 minutes. 5) In a small bowl, make the lemon-garlic-herb aioli by mixing together the mayonnaise, grated garlic cloves, parsley, tarragon, lemon juice, salt, and Worcestershire sauce. 6) Heat an indoor or outdoor grill to 375 degrees F. Lightly butter and toast the brioche buns on the hot grill for about 30 to 60 seconds or until grill marks are achieved. (Alternatively, use a grill pan over medium to medium-high heat on the stovetop.) 7) Lightly grease the grill or grill pan, and grill the salmon patties for 4 to 5 minutes on each side or until cooked to 145 degrees F internally. 8) Assemble the burgers with toppings of choice, and don’t forget the aioli! 9) Enjoy!

Upside-down mango cheesecake: a graham cracker crust on top, creamy cheesecake base on the bottom, and a homemade mango jam hidden inside. By @mymanabites Full recipe here https://ift.tt/L3N4sqK INGREDIENTS Mango Jam 2 cups chopped ripe mango ¾ cup granulated sugar 1 teaspoon lime juice Crust 24 graham crackers ¾ cup unsalted butter, melted Cheesecake Filling 3 (8-ounce) blocks cream cheese, softened ¾ cup powdered sugar 1 teaspoon vanilla extract 1 cup heavy whipping cream Topping 1 ripe mango, peeled, thinly sliced, and shaped into roses ¼ cup white chocolate chips, melted PREPARATION 1. Make the mango jam: Cook the mango and sugar in a 2½-quart nonstick saucepan over medium, stirring often, until softened, 6–7 minutes. Gently mash the mixture. Stir in the lime juice. Cook, stirring often, until thick and jammy, 4–5 minutes. Transfer to a bowl. Chill in the fridge for 30 minutes. 2. Meanwhile, make the crust: Pulse the graham crackers in a food processor until fine. Add the melted butter. Pulse until the texture resembles wet sand. 3. Place 4 (4-inch) nonstick springform pans on a baking sheet. Place ½ cup crust mixture in each pan, and press firmly into the base and sides using a flat-bottomed cup. Chill until ready to use. 4. Make the cheesecake filling: Beat the cream cheese in a large glass bowl (10–12 inches) on medium speed until smooth, 1–2 minutes. Add the powdered sugar and vanilla; beat until combined, 1–2 minutes. In a separate bowl, beat the heavy cream on high speed until soft peaks form, 2–3 minutes. Fold the whipped cream into the cream cheese mixture. 5. Spoon the cheesecake filling into the pans to fill each halfway (about ¼ cup each). Add 1½ tablespoons chilled jam to the center of each, then top with more filling (about ¼ cup). Smooth the tops, cover, and refrigerate for at least 4 hours or up to overnight. 6. Loosen each pan in a bowl of warm water for 2 minutes. Release the rings. Invert the cheesecakes onto plates. Top each with a mango rose. Drizzle with melted white chocolate. 7. Enjoy!

☕️ Matcha Marshmallows with Marshmallow Root Recipe by @katlieu 🍓✨ These fluffy, chewy, Asian-inspired marshmallows are packed with earthy matcha, a touch of pandan, and a whisper of savory miso. A fun treat with layered flavors and textures! Ingredients: 2 1/2 tablespoons gelatin powder 1/2 cup cold water (for blooming) Optional: ½ teaspoon marshmallow root extract 1 cup granulated sugar 1/2 cup maple syrup or honey 1/3 cup water (for syrup) 1/2 teaspoon pandan extract 1 teaspoon matcha powder 1 teaspoon to 1 tablespoon red miso paste (adjust to taste) Optional toppings: freeze-dried strawberries, unsweetened coconut shreds Powdered sugar, for dusting 1. In a small bowl, bloom the gelatin powder with the cold water. Let it sit until it is fully bloomed and jelly-like. Transfer the bloomed gelatin to the bowl of a stand mixer fitted with a whisk attachment. 2. Add the marshmallow root extract if using. 3. Combine the granulated sugar, maple syrup or honey, and 1/3 cup water in a medium saucepan. Heat over medium until the syrup reaches 241°F to 245°F (soft-ball stage). 4. Turn the mixer on low and carefully drizzle the hot syrup into the gelatin mixture. Once all the syrup is added, increase the speed and whip until the mixture is thick, glossy, and pale. 5. Add the pandan extract, matcha powder, and red miso paste. Start with 1 teaspoon of miso and increase to taste. Whip again until fully incorporated and stiff ribbons form. 6. Pour the marshmallow mixture into a small, parchment-lined baking dish. Before it sets, top with freeze-dried strawberries and coconut shreds. 7. Let the marshmallows sit at room temperature for at least 1 hour, or until firm. Dust with powdered sugar before cutting into cubes to prevent sticking.

Creamy plain Greek yogurt, chopped peaches, and honey are scooped into clusters and frozen, then dipped in silky white chocolate for the perfect refreshing bite. No oven, no stress. Just freeze and enjoy. Full recipe below and in bio! INGREDIENTS 1½ cups chopped fresh or frozen peaches (½-inch pieces) 1 cup plain whole-milk Greek yogurt 1 tablespoon honey 1 cup white chocolate melting wafers 1 teaspoon refined coconut oil (optional for smoother chocolate) PREPARATION Using a spatula, stir together the peaches, yogurt, and honey in a medium glass or ceramic bowl until evenly coated. Line a large rimmed baking sheet (13 x 9-inch or similar size) with parchment paper. Using a tablespoon or a small cookie scoop, scoop the mixture into 10–12 clusters spaced at least 1 inch apart on the lined baking sheet. Freeze for about 2 hours, until the clusters are firm to the touch and no longer sticky. Microwave the chocolate wafers and coconut oil (if using) in a small microwavable glass bowl on MEDIUM until melted and smooth, 40 to 60 seconds, stopping to stir every 20 seconds. Remove the frozen clusters from the baking sheet. Working with 1 at a time, dip the clusters into the melted white chocolate. Let the excess drip off, then place each cluster on the parchment-lined baking sheet. Return to the freezer, and freeze for 10–15 minutes, until the chocolate is set and firm.

Full recipe above INGREDIENTS 2 tbsp olive oil, divided 2 lb boneless, skinless salmon 1 tbsp Old Bay seasoning 1 small onion, diced 1 orange bell pepper, diced 1 green bell pepper, diced 2 tsp garlic powder 2 tsp black pepper 12 egg roll wrappers 2 cups shredded mozzarella cheese ½ cup water, or as needed 6 cups (48 ounces) vegetable oil Hot honey BBQ sauce, for drizzling 3 scallions, chopped Instructions Rub 1 tablespoon of the olive oil over the salmon. Sprinkle the salmon with the Old Bay. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the salmon, and cook on both sides until cooked through, about 5 minutes per side. Remove from the skillet, and set aside. Add the onion, bell peppers, garlic powder, and black pepper to the skillet. Cook, stirring often, until vegetables are softened, about 5 minutes. Remove from heat. Return the salmon to the skillet, and break it up into smaller pieces, leaving some larger chunks. Lay egg roll wrappers flat like a diamond, with 1 corner pointing toward you. Place the salmon mixture evenly on each wrapper, just below the center of the wrapper. Sprinkle evenly with the mozzarella. Fold the bottom of each wrapper corner up over the filling, and gently tuck in. Fold in the side corners toward the center like an envelope. Roll tightly toward the top corner. Seal the edge with a dab of water to hold closed. Heat the vegetable oil over medium-high heat in a deep pan until the oil reaches 350°F–375°F (180°C–190°C). Working in batches, fry the egg rolls until golden brown and crispy, 3–4 minutes per batch. Transfer to a wire rack or a paper towel to drain. Drizzle the egg rolls with hot honey BBQ sauce, and sprinkle with chopped scallions. Serve hot! Enjoy!

Tender chicken simmered in a trifecta of soy sauce, sesame oil, and rice wine — each bite bursting with garlicky, basil-kissed umami @groovyfoodiess Recipe is by @derekkchen INGREDIENTS 2 pounds skin-on chicken thighs or drumsticks, boneless 3 tablespoons sesame oil 20 garlic cloves 5 fresh ginger slices 3 fresh Thai red chiles ⅓ cup shaoxing wine 3 tablespoons light soy sauce 2 tablespoons rock sugar 1 tablespoon dark soy sauce 1 handful fresh Thai basil Cooked rice or noodles, for serving PREPARATION Cut the chicken into about 2-inch pieces. Set aside. Heat a medium wok over medium. Add the sesame oil, and let it heat, about 30 seconds. Add the garlic, ginger, and chiles. Cook, stirring often, until fragrant, about 2 minutes. Add the chicken. Cook, stirring occasionally, until the chicken is 50% cooked or until a pale white color, about 5 minutes. Add the shaoxing wine, light soy sauce, rock sugar, and dark soy sauce. Reduce the heat to low. Cover the wok, and simmer for 15–20 minutes, until the chicken is fully cooked, firm, and bouncy. Uncover, and increase the heat to medium-high. Stir until the sauce slightly thickens, about 3 minutes. Add in the fresh chilis and fresh thai basil Serve with hot rice or noodles. Enjoy!
