Pulled BBQ Jerk Mushroom Sandwich
@tappedinwellness PULLED BBQ JERK MUSHROOM SANDWICH INGREDIENTS 8-10 king oyster mushrooms 2 tsp allspice 1 tsp salt 1 tsp pepper 1 tsp garlic powder 1 tsp onion powder 1 tsp dried thyme ½ tsp cinnamon ½ tsp cayenne Oil, for coating ½ cup BBQ sauce Curry Slaw: 1/4 red cabbage, sliced 1/4 green cabbage, sliced 1/3 cup grated carrots 3½ tbsp vegan mayo 2 tbsp curry powder Juice of 1 lime Pinch of salt and cracked black pepper INSTRUCTIONS Preheat the oven to 400ºF (200ºC). Shred the king oyster mushrooms with a fork and transfer to a large bowl. Add the allspice, salt, pepper, garlic powder, onion powder, thyme, cinnamon, cayenne, and enough oil to coat, then mix until well combined. Sauté in a large skillet over medium-high heat until the mushrooms have reduced by about half in size. Pour the BBQ sauce over the mushrooms, stir to combine, and roast in the preheated oven for 8-10 minutes. Meanwhile, place all the slaw ingredients in a medium bowl and mix to combine. Assemble the sandwich and enjoy.
