PHYLLO MINI QUICHE @Sweetportfolio over here! Helping you impress your brunch guests ;) Instead of using a p芒te bris茅e crust (savory pie crust), we will use phyllo sheets. You can find these in the frozen section of most grocery stores; they are really easy to use. We will cut them into squares to make little nests for our quiche. I added white cheddar, scallions, and pancetta to mine, but you can add anything your heart desires. Yield: 12 mini quiche ✨Ingredients: -1 (16-ounce) package frozen phyllo dough -4 oz diced pancetta -2 tsp neutral oil (I used avocado) -5 medium eggs -1 tsp salt -¼ tsp black pepper -¾ cup half-and-half -4 oz grated white cheddar, plus more for sprinkling -¼ cup sliced scallions Follow the instructions on the phyllo dough packet to thaw. Preheat the oven to 325°F (160°C). In a medium saucepan, cook the pancetta over medium-high heat for 3-4 minutes until crispy. Transfer to a plate to cool, pat with a paper towel to remove excess grease, and set aside. Unroll the thawed phyllo dough over a cutting board. Take about 6-8 sheets and cut them in half; take the halves and cut them into squares. The full sheets should yield about 8 squares each. Grease a muffin pan with oil. Take the phyllo squares, and divide the sheets into two (about 3-4 sheets), and press down onto the prepared muffin pan using your fingers. Rotate the remaining phyllo square half and press down gently to form a nest. Repeat until all the muffin cavities are filled. In a medium bowl, beat the eggs using a whisk and season with salt and pepper. Add the half-and-half and continue whisking until incorporated. Add the grated cheddar cheese and continue to whisk, dissolving any clumps. Pour the egg mixture into the phyllo nests, leaving about 1 inch of space at the top. You can add the mix-ins (pancetta and scallions) either before or after; it doesn’t matter since they’ll rise to the top with the egg mixture. Sprinkle more grated cheddar cheese on top and bake for 18-20 mins, until the quiche rises and looks bouncy and not wet. Cool for 5 minutes, and enjoy!

INGREDIENTS Broth: 1 leek, halved 1 onion, peeled and halved 2 tablespoons extra virgin olive oil 20-25 cups water 1 celeriac, cut into medium pieces 4 celery stalks with leaves, cut into medium pieces 3 large carrots, cut into medium pieces 1 large parsnip, cut into medium pieces 1 head garlic, halved 2 tablespoons garlic powder 1 teaspoon turmeric 1 teaspoon onion powder Kosher salt, to taste Freshly ground cracked black pepper, to taste, plus more for garnish Handful of fresh parsley Handful of fresh dill, plus more for garnish Matzah Balls: 2 cups matzo meal 6 large eggs 1/2 cup water 1/3 cup neutral oil 2 tablespoons chopped fresh dill 2 teaspoons kosher salt 2 teaspoons garlic powder 1 1/2 teaspoons baking powder 1 teaspoon freshly ground black pepper 1 teaspoon onion powder PREPARATION Preheat the oven to 450°F (230°C). Make the broth: Place the leek and onion on a sheet tray and drizzle with the olive oil. Roast in the oven for 15-20 minutes, until slightly caramelized. Fill a large stockpot with the water. Add the leek, onion, celeriac, celery, carrots, parsnip, garlic, garlic powder, turmeric, and onion powder. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes. Taste for seasoning. Add the parsley and dill; simmer for 15-20 minutes. Taste for seasoning. Keep on a low simmer until ready to use. Make the matzah balls: In a large bowl, mix together the matzo meal, eggs, water, oil, dill, salt, garlic powder, baking powder, pepper, and onion powder until well combined. Cover and refrigerate for at least 20 minutes to set. Bring a large pot of salted water to a boil. Use wet hands to roll the matzo mixture into golf ball-sized balls and place into the boiling water. Cover and simmer for 30-40 minutes. Place the matzah balls in soup bowls and ladle in some broth. Garnish with dill and cracked black pepper.

Jiggly Japanese Coffee Jelly is the upgrade your morning needs! @ivskitchen ☕️ Ingredients Jelly: 1/3 cup brown sugar 2-3 tablespoons instant coffee 3 teaspoons unflavored gelatin powder 1 cup boiling water 1 cup cold water Foam: 4 ounces heavy whipping cream 1 tablespoon caramel sauce Salt, to taste Preparation 1. Make jelly: In a large jug, add the brown sugar, instant coffee, gelatin powder, and boiling water. Mix until all ingredients have dissolved. 2. Add the cold water. Mix well, then transfer to 2 coffee mugs. Refrigerate for 4 hours, or until firm. 3. Make foam: Add the heavy whipping cream, caramel sauce, and salt to a medium container and whisk for about 30 seconds, or until foam begins to form. 4. Divide foam in half for 2 servings and serve with jelly coffee. 5. Enjoy!

@sugarandsparrowco This Belgian waffle layer cake by @sugarandsparrowco is the brunch cake of our DREAMS grab the full recipe (including homemade Belgian waffles!) below BELGIAN WAFFLE LAYER CAKE Serves: 10-12 MASCARPONE CREAM 1 ¾ Cups (210g) powdered sugar 2 tsp vanilla extract or vanilla bean paste 1 Cup (8 Oz, 225g) mascarpone cheese, cold 2 ¼ Cups (540ml) heavy whipping cream, cold WAFFLE AND BERRY LAYERS ½ Cup strawberry jam 2 Tbsp water ¼ Cup fresh raspberries, halved ¼ Cup fresh blackberries, halved ¼ Cup fresh blueberries, halved ¼ Cup fresh strawberries, quartered ¼ Cup of the above berries, kept whole for garnish 4 Belgian waffles (homemade or made with mix), cooled to room temperature INSTRUCTIONS Make the mascarpone cream: place all four ingredients into a stand mixer fitted with the whisk attachment and mix together on low until combined. Turn the mixer to high speed and whip until it becomes the consistency of whipped cream with stiff peaks, 2-3 minutes. In a small bowl, mix the strawberry jam and water together and set aside In another small bowl, mix together all of the halved and quartered fresh berries. Assembly: place the first Belgian waffle onto a serving plate or cake stand. Add ¼ of the strawberry jam on top. Pipe or spread a layer of mascarpone cream on top of the jam, then top with ⅓ of the fresh mixed berries. Place the next waffle on top and repeat filling and stacking until you reach the final mascarpone cream layer. Top with the whole berries. Serve within 2 hours.

This tart was so delicious that it became a family favorite and disappeared within minutes. *cup of tea emoji* Here's what you need to make this at home: Ingredients: 1 sheet of puff pastry 7 eggs, divided 1 tbsp of water 4 slices of bacon, cooked and crumbled 2 cups of arugula 1 bunch of chives, chopped 1 tbsp of crushed black pepper Shredded cheese of choice Instructions: Preheat the oven to 350°F (180°C). Roll out the puff pastry and use a sharp knife to score a large rectangle in the center. Once done, fork the rectangle to prevent it from rising. Next, beat together 1 egg and the water to make an egg wash. Brush egg wash around the edges and half-bake according to your puff pastry instructions. Once the puff pastry is half-baked, press down the middle with the back of a spoon to prevent the eggs from running, crack in the remaining 6 eggs, and sprinkle with the crumbled bacon. Bake in the preheated oven for 10 minutes, or until the eggs are to your liking. Lastly, top with the arugula, chives, crushed black pepper, and shredded cheese.

INGREDIENTS 2 scallions, chopped 2 garlic cloves, grated Red chili flakes, to taste 2 ounces olive oil 1 tablespoon capers 2½ ounces Boursin cheese of choice 4 ounces dry spaghetti ½ cup dry white wine 1 teaspoon whole-grain mustard ½ lemon, zest and juice Salt, to taste Freshly ground black pepper, to taste 1 (6-ounce) can salmon ¼ cup parsley, roughly chopped ¼ cup dill, roughly chopped PREPARATION 1. In a large stainless steel pan, gently sweat the scallions, garlic, and chili flakes in olive oil over medium-low heat until softened. 2. Toss in the capers and stir in the Boursin cheese until melted. 3. Meanwhile, bring a large pot of salted water to a boil. Cook the spaghetti in boiling water according to the package directions. Reserve 1 cup cooking water; drain spaghetti and set aside. 4. Deglaze the cheese sauce with the white wine, increase heat to medium, and cook for 1 minute. Add the mustard, lemon zest and juice. Season with salt and pepper. Reduce heat to medium-low and gently simmer the sauce until reduced and slightly thickened. 5. Add the cooked pasta to the sauce, along with some pasta water, a little at a time, until thickened to the desired consistency. 6. Turn off heat and toss in the salmon, parsley, and dill. 7. Enjoy!

@breadbakebeyond Burrata & Date Toast. This dish is just the right mix of creamy cheese and sweet dates, with a little thyme and some crunchy walnuts on top. Easy to make and seriously tasty! Ingredients: For the Date Spread: 5 pitted Medjool Dates 2 tbsp Roasted & Unsalted Walnuts 1 tbsp Maple Syrup (or Honey) 2 tbsp Water (if needed) For the Toast Assembly: 1 slice of your preferred Bread 2 tbsp Date Spread 1 Burrata Cheese About 1 tbsp Roasted Walnuts, chopped A sprinkle of Fresh Thyme A drizzle of Olive Oil A pinch of Salt Instructions: Make the Date Spread: 1. In a food processor, combine the dates, roasted walnuts, and maple syrup. 2. Pulse while gradually adding water, if needed, blending until the mixture forms a smooth paste. If you don’t have a food processor, a mortar and pestle can be used instead. Prepare the Toast: 1. Lightly toast the bread slice. 2. Spread a generous amount of the date spread on the toast. 3. Place the burrata cheese on top of the date spread. 4. Sprinkle chopped walnuts on the burrata. 5. In a small bowl, mix the thyme with the olive oil and a pinch of salt, then drizzle this mixture over the burrata. Serve immediately and enjoy!

Irish Pub-Style Potato Nachos 8 ounces bacon 3-4 russet potatoes 3-4 tablespoons olive oil 1½ tablespoons paprika 1 tablespoon onion powder 1 tablespoon garlic powder Salt and pepper, to taste 1-2 cups cheese (e.g., white or yellow cheddar, cheddar Jack, etc.) 1/2 cup chopped green onions (3-4 stalks) Sour cream, to serve Preheat the oven to 385°F (196°C). Line 2 baking sheets with foil. Arrange the bacon on the prepared baking sheets so they do not touch. (I twist the bacon so it turns extra crispy while baking.) Bake for 15-20 minutes, until desired crispiness is reached. Chop the bacon into bite- sized pieces and set aside. Increase the oven temperature to 400°F (200°C). Wash and dry the potatoes, then cut them into ¼-inch slices. Place into a large bowl; toss with the olive oil, paprika, onion powder, garlic powder, salt, and pepper until well coated. Arrange the potatoes in a single layer on 2 unlined baking sheets. Bake for 20 minutes, then flip the potatoes and continue baking for 20 minutes more, or until fork tender. Turn the oven to high broil. In a cast-iron skillet or large baking dish, layer the potatoes, cheese, bacon, and green onions until all the potatoes are used. Cook the dish under the broiler until the cheese is melted and bubbly. Dollop some sour cream on top, and enjoy!

Bring a small pot of water to a rolling boil. Gently drop the eggs into the boiling water and boil for 7 minutes, or until soft boiled. 2. Immediately plunge the eggs into an ice bath for 1-2 minutes. 3. Remove the eggs from the ice bath, remove the egg shells, and roughly chop the eggs. 4. In a medium bowl, add the chopped eggs, lemon juice, mayo, chives, dill, Parmesan, lemon zest, mustard, hot sauce, celery salt, and pepper. Mix until well combined; taste for seasoning. 5. Spread the egg salad over a bread slice, top with the potato chips, and sandwich together with the remaining bread slice. 6. Enjoy!

@tinatakeslunch Ingredients 4 large eggs 1 cup milk, room temperature ½ cup granulated sugar 2 tablespoons unsalted butter melted 1 teaspoon vanilla extract ½ teaspoon cinnamon ½ teaspoon salt 8 mini croissants Powdered sugar, berries, and maple syrup for serving Instructions In a medium bowl, add the eggs, milk, sugar, melted butter, vanilla, cinnamon, and salt; whisk until well combined. Set aside. Add the croissants to a large baking dish, tearing them up into small pieces as you add them. Pour the egg mixture over the croissants. Wrap the baking dish with plastic wrap and place in the refrigerator overnight. The next morning, preheat the oven to 350°F (180°C). Remove the plastic wrap from the baking dish and bake in the preheated oven for 40 minutes, or until the center is set. Allow to cool for 10 minutes. INGREDIENTS: 10 slices of bread 10 cooked sausage links 3 large eggs ½ cup milk 3 tablespoons sugar 1 tablespoon all-purpose flour 1 teaspoon vanilla extract ½ teaspoon cinnamon Maple syrup, for serving PREPARATION: Flatten the bread slices and remove the crusts if you prefer. Place a sausage link on each flattened bread slice and roll it up. Mix together the eggs, milk, sugar, flour, vanilla, and cinnamon in a large bowl until smooth. Heat a greased griddle or skillet over medium-high heat. Dip the sausage roll-ups in the egg mixture. Cook on the hot griddle until golden brown on all sides. Serve warm with maple syrup.
