Half an eggplant scooped out and filled with a mixture of tricolor quinoa, sauteed diced eggplant interiors, spicy tomato sauce, capers, and topped with grated extra tasty Australian cheddar and sprinkled with smokey paprika.
Baked (covered) in a combo convection/microwave @ 180°/1 for 30 minutes
