Baby Eggplants on a Bed of Quinoa with Tomato Sauce

Padmacara has added a photo to the pool:

Prepare ½ (for two) cup tricolor quinoa.

Cut 4 baby eggplant in half, rub in a bit of Maggi sauce, add salt (I used Herbamare) freshly ground pepper, drizzle qith olive oil, cover with grated cheese, and sprinkle with smokey paprika. Bake in convection/microwave for 20 minutes at 170°C.

Prepare a quick tomato sauce: sauter ¼ onion, ½ shallot, 2 diced cloves of garlic, (add sliced chilli if you like), 1 tin diced tomatoes, salt, pepper, and simmer for ±20 minutes.

Lay a bed of quinoa on a warmed plate, place 3 or 4 halves of eggplant on top and ladle the tomato sauce on top.
