My homemade lunch today of enchiladas and spanish rice.

I have a long and involved spanish rice recipe I came up with. I was too tired and in a hurry to mess with that, so I concocted a cheat spanish rice recipe:

1 cup basmati rice
Some hot Pace Picante Sauce...about 10 oz.
2 cloves of garlic chopped coarse
half a small onion chopped coarse
about a teaspoon and a half, maybe a tablespoon, of cumin
3 scant cups of water
about 2 tablespoons of butter

Mix well, bring to a boil then reduce to a simmer on your very lowest setting and cover. Cook for 20 minutes. Don't lift the lid or stir the rice. Once you've put the lid on leave it alone.

The aroma and taste is great!

Marinated Lamb Kebabs

Lamb marinade: 1 lbs lamb tenderloin
1 cup full fat whole milk yogurt
2 tsp smoked sea salt
5 large garlic cloves grated
2 tsp red pepper flakes
1 tbsp ancho chile powder
2 tsp smoked paprika
1 tsp turmeric
Marinade under refrigeration for 3 hours. Grill at 375ยบ for 15 minutes turning once.

Ulla’s Sugar Cake - basically, all the variations of these “basic sponge cakes” are called “sugar cakes” …. and this recipe is old, and still often used, so of course there will be slight variations. This version is from the cookbook we used in school in the 1950s.
(Yeah. I'm old. And happy to be able to tell the tale.)

Recipe for a 20 cm/8” fluted cake pan

Preheat oven to 350˚F (175˚C)
Prepare a cake pan - grease inside with butter, then shake in flour, or use Baker’s Joy :-)

Ingredients
2 eggs
1 cup (2dl) sugar
3/4 (75g) stick butter, melted
1 1/4 cup (3dl) flour (All Purpose)
2 1/2 teaspoons baking powder
1/2 cup + 2 tablespoons (1 ½ dl) cream
zest from 1 lemon, or vanilla (have never measured the vanilla, just “to taste”)

Melt the butter, set aside.
Beat sugar and eggs until fluffy and lemon yellow in color.
Gradually beat in the melted butter, cream and flavoring.
Mix baking powder with flour, and add to batter.

Pour batter into cake pan, and bake for about 35 - 45 minutes - until the cake has a nice golden color, pulls away a bit from the pan, and a cake tester comes out clean.

Works well for a layer cake, too. The Strawberry Cake I made was baked in an 8.2 x 2.6”/ 20.3 x 6.63 cm spring form pan from Wilton.

Sliced pork roast

Yesterday I cooked my little pork roast (2 lbs) with charred tomatillo sauce, potatoes, eggplants, green onions, shallots, and garlic.
- Seared the pork with olive oil over high heat on all sides in a cast iron skillet for about 5 minutes. Removed.
- Added the shallots, green onions and garlic to the skillet and cooked for 3 minutes.
- Placed the pork back in the skillet and added pealed boiled potatoes, 2 Anaheim chilis and placed uncovered in preheated 450F oven
- Cooked uncovered for 30 minutes. Then covered to cook covered for additional 1.5 hours.
- Added the sliced eggplant disks on top one hour before ending.
- Final product was subliminal but the pork was too soft to slice.
- Ended up eating the potatoes, delicious carnalized edges, and drippings with bread for dinner.
- The beautiful pork formed a shape and I sliced it this morning.

Cold cuts and sliced Tillamook sharp cheddar slices melt on hamburger buns. Buns grilled in a pan and dressed with olive tapenade on one side and leftover Zankou garlic sauce on the other!

Adapted from Rick Stein's recipe (below, serves 4):

Ingredients:

3 tbsp olive oil
1 small onion, chopped
1 clove garlic, chopped
80 g serrano ham, chopped
1 tsp hot smoked paprika (pimentรณn picante)
8 large tomatoes (about 750g), skinned and chopped, or 2 x 400g tins of peeled plum tomatoes
1 tsp tomato paste
4 eggs
12 slices chorizo sausage
1 red capsicum (pepper), roasted and skinned, cut into 8 strips (or use peppers from a jar)
salt and freshly ground black pepper

For the griddled bread
4–8 thick slices bread
1 clove garlic, halved
30 ml olive oil
small handful fresh chives, chopped, to serve

Method:

Heat the oil in a frying pan or shallow casserole over medium-low heat and cook the onion and garlic until soft, 5 to 10 minutes. Add the ham and the pimentรณn picante, fry for 3 minutes, then add the chopped tomatoes and tomato paste. Cover the pan and cook until the tomatoes are reduced and pulpy, about 10 to 15 minutes.

Heat the oven to 200°C/gas 6.

Grease a large ovenproof dish or shallow casserole and pour in the tomato sauce. Break the eggs into the sauce. Arrange the chorizo slices around the eggs and the red pepper strips over and around the eggs. Season with salt and pepper. Bake until the egg whites are set and the yolks still soft, about 8 to 10 minutes. Meanwhile, rub the bread with the garlic, brush with the olive oil and griddle it on a ridged pan or in a frying pan. Scatter the chopped chives over the dish and serve with griddled bread.

Use up the stale bread!
3 slices stale bread cubed, 6 eggs,2pts milk plus 2 tbs cream or creme fraiche if you have it, 1 red pepper finely sliced,1 large onion finely sliced, bacon, salami or tuna (if liked), grated cheese, salt, pepper, nutmeg, mixed herbs to taste

Add the cubed bread to a large casserole dish.Beat the eggs with the milk and cream,pepper, salt,herbs and nutmeg, pour over the bread, leave to soak for half an hour. Fry off the onion, pepper and sliced onion, also the bacon/smoked sausage/whatever meat you decide to use. If you're using tuna or salami, omit this stage. Add the meat/fish and vegetables to the bread and milk mix, add more seasoning if liked. You could also add a tin of sweet corn or some frozen peas at this satge if you wished. Cover the whole with grated cheese, start to cook in a low oven (about 40 minutes) finish off in a hot oven for about 20 minutes or until the cheese is bubbling and golden. Serve with a green or tomato salad.

Ciabatta Bread

Ingredients:
1.5 (12 oz) cup Organic Unbleached All-Purpose Flour
250 ml warm water
1/4 tsp Salt
1/4 tsp Yeast
Mix well ingredients until they are thoroughly combined.
Cover with plastic wrap and let stand at room temperature for 3 hours. Place in refrigerator till next day. Take out from refrigerator and let it sit at room temperature for 1 hours.
Transfer it to a well-floured surface and sprinkle dough with a little flour. Shape the dough. Place on a parchment paper-lined baking pan and cover with a towel. Let stand on counter top for 35 min. Place it in the oven and bake it for 30 minutes, or until the color turns golden brown.
