RATATOUILLE:
Sauter half a medium onion and a thumb-sized pice of shallot (both finely chopped), in a good bit of olive oil. Peel and roughly chop (12cm/1/2" cubes?) a medium sized eggplant, add, and continue cooking, while you slice a medium zucchini into 1/4"/5mm slices and add. Slice a medium green (bell) pepper into 1/4"/6mm slices, cut in half lengthways (or 1/3rds). Finely dice 3 goo-sized tomatoes, and add.
Add the herbs of your choice (mine are lots of basil, a bit of oregano, maybe a bit of thyme — basically 'herbes de Provence' — salt, pepper, and that's it.
Unless you like to do a bit of fun personal things, as I do, and add a splash of V8 (Original) juice and Maggi sauce.
Cook down until the veggies are getting soft, then add a 400g (14oz) tin of diced tomatoes, 2 good sized garlic cloves smashed in a garlic press.
Mix it all well, and let it cook down uncovered until it's a nice, thick consistency. Keep warm, while you cook the
OMELETTE:
2 eggs per person, with a splash of water added and mixed with a whisk, to which one adds:
• a dash of curry powder, for depth;
• a good tablespoon of turmeric, for health and colour;
• chopped parsley, garlic chives, and/or other herbs to one's taste;
• chopped fresh chilli, to one's taste;
• a splash of Maggi sauce (I suppose soy sauce would work as well)
• a bit of salt & pepper
and whisk it all around. Let sit for a while so that the flavours blend.
Put a nice knob of unsalted butter in a big non-stick skillet, douse with a tablespoonful of nice flavourful oil (I usually use macadamia), and heat until the butter bubbles are just starting to die down. Anoint your big spatula with the mixture, so it won't get stuck in the eggs, then pour them in.
Lift the edges, until most of the runny part of the eggs is cooked.
Sprinkle a tasty shredded cheese of your choice (I often use cheddar, mozzarella, both, or parmesan) on the left (if you're right-handed) half of the egg mixture, slide your big spatula under the right-hand side, and flip it over to produce a half-moon.
Turn off the heat, let it sit for a moment (so that the cheese melts and the eggs cook through) while you warm your plates, and enjoy...
