Well-balanced Veggie Meal...

...but a bit complicated.

Basically, it's roasted (or pan-fried) cauliflower, on a bed of wilted red cabbage leaf and a spicy tomato sauce, topped with hard-boiled egg slices and a sun-dried tomato and black olive garnish with some sort of fresh herbs, and surrounded with roasted potato wedges. Um, well I think that's what it is, anyway! ;-)

Boil some water, wilt the red cabbage leaf in it; cut a shallow 'X' in the bottom of a tomato, immerse it in the boiling water for 30 secs, or until the 'X' starts to widen, remove and peel (eating the peel of course!); put the egg into the boiling water, leave for 10 mins, then 'shock' in cold water (so it'll be easy to peel). Save the water to water the garden with.

POTATOES: Cut the potatoes into bite-sized wedges, and marinate in something you like: olive oil, soy sauce, lemon, Maggi sauce, and herbs are my favourites. After a while, roast them in your microwave combi oven at 170°/250w until they're browned & soft, ±25-30 mins.

FOR THE SAUCE: throw a couple of cloves of garlic (roughly quartered), the peeled tomato roughly chopped, a few cubes of feta cheese, the stalks of the herbs you're using (I used cilantro, but parsley or basil would be just as good, I imagine), olive oil, & lemon juice into a little blender. Add the spices you like—I used Raz el Hanout, a pinch of curry, and a splash of turmeric, and churn the whole lot up until it's smyoothe.

FOR THE GARNISH: finely chop some Kalamata olives, finely slice some sun-dried tomatoes, add the (maybe chopped?) leaves of your selected herbs, and toss the lot in a bit of olive oil and lemon juice. Add salt & pepper, put aside, and let the flavours combine.

Now: the hard part. Rince the cauliflower head, drain, and put the cursed thing on a big cutting board. With a large knife, try to cut a 1/2" (1.5cm) 'steak' without coming out with a bunch of tiny bits of cauliflower splattered all over your kitchen floor.

If you succeed, either pan-fry (in some olive oil and butter), broil, or roast your 'steak' brushed with olive oil (and maybe rubbed with a bit of spice of your choosing) until it's golden browned and tender.

TO ASSEMBLE: Place the wilted cabbage leaf on the plate of your choice (this dish has lots of colours, so either white or black might be nice), spread a bit of the sauce on the leaf, put the steak in the middle, cover with the slices of boiled egg, top with the garnish, and surround with the roast potato wedges.

Voilà! :-)

P.S. This is, obviously, for one portion. Change the proportions for multiple guests...
