Challah
Ingredients:
2 tablespoons dry yeast
1½ teaspoons salt
½ (1dl) cup sugar
½ cup (1dl) oil
1½ (2⅓ dl) cup warm water
3 egg yolks, beaten
6 cups (14 dl) all purpose flour
1 egg, beaten, for the glaze.
Directions
1. Combine salt, sugar, dry yeast,and 2 cups (4dl) of the flour. Mix well.
2. Add the oil and the warm water. Mix well.
3. Add the 3 egg yolks, mix well.
4. Add the remaining flour to form a soft dough.
5. Knead until shiny - approx. 15 min.
6. Put in a lightly greased bowl, grease the top of the dough, cover, let rise until double in size (1 - 1½) hour.
7. Punch down the dough. Knead, divide into 6 pieces.
8. Roll the pieces into long strands. For each loaf, braid three strands together.
9. Put the two Challah loaves on a baking sheet, cover, let rise until double in size (approx. 1 hour).
10. Preheat the oven to 375º F (200ºC).
11. With a pastry brush, brush the loaves with the egg glaze.
12. Bake until golden brown (c. 40 min.)
13. Cool on a rack.
