So easy to make
3 cups cold cooked rice
2 tbsp butter
3 tbsp cold pressed oil
1 onion chopped
1 zucchini
1 squash
1 cup peas
1 cup carrot
snow peas
2-3 tbsp soy sauce
salt
pepper
cook the rice a day ahead and put in the refer. Heat the oil and butter in a pan over medium high heat. Add the carrots, and onion - cook until the onion is translucent. Add the zucchini and squash and cook for 2 minutes. Stir often! Add the rice (break up with your hands). Coat the rice with the oil in the pan. Add soy sauce and cook until the the rice begins to soften. Add the peas and the snow peas and cook for another few minutes until cooked to your liking.
