HONEY BUTTER BERBERE SHRIMP & GRITS! @begreedyeats Let’s get into it! Creamy, cheesy grits topped with juicy shrimp and smoky andouille sausage, all tossed in a sweet, spicy honey butter berbere sauce that is glossy, bold, and downright delicious. It’s rich, it’s vibrant, it’s got that little citrus kick — and baby, every bite hits. Sweet heat, traditional Ethiopian spices, Southern comfort, and big flavor all in one bowl. Serve it up, spoon that extra sauce on top, and thank me later. You need this on your table ASAP. INGREDIENTS: Cheesy Grits: 2½ cups vegetable or chicken stock 2 cups heavy cream 1 cup corn grits ¾ cup shredded Parmesan cheese ¾ cup shredded sharp cheddar cheese 2 tsp kosher salt ½ tsp ground black pepper 3 tbsp unsalted butter Honey Butter Berbere Shrimp: 1 lb jumbo shrimp, peeled and deveined (you can leave the tails on if you like) 2 tbsp berbere seasoning, divided ½ lb andouille sausage (or smoked sausage), chopped 8 tbsp (1 stick) unsalted butter, cut into cubes, divided 1 cup diced yellow onion 1 cup diced bell pepper 5 cloves of garlic, finely minced ¾ cup pure honey ¼ cup vegetable or seafood stock 1 tbsp fresh lemon juice 2 tsp lemon zest Sliced green onions, for garnish Lemon slices, for garnish (optional) INSTRUCTIONS: Pat the shrimp dry with paper towels, and place them in a bowl. Season with half of the berbere seasoning and gently toss to coat. Cover and refrigerate while you prepare the grits. Place a large pot over medium-high heat. Add the chicken stock and heavy cream and bring to a gentle boil. Slowly whisk in the corn grits to prevent clumping. Once the grits begin to bubble, reduce the heat to medium-low. Cover and cook, stirring occasionally, for 10–15 minutes, until the grits are soft and the liquid is absorbed. Stir in the shredded cheeses. Season to taste with kosher salt and ground black pepper. Add the butter, and cook until it melts

Caterina, aka @thecookingmawma shows you how to make braised short rib with creamy polenta - the ultimate Valentine’s Day dinner for someone special. Slow-braised, fall-apart tender short ribs over cozy polenta make a romantic, restaurant-worthy meal at home. Share this with who you’re cooking for on Valentine’s Day to get them excited for dinner! INGREDIENTS: *serves 4-6* -for the short ribs- 5-7 bone-in short ribs (about 4-5lbs) 1 tsp pepper 2 tsp salt, divided, plus more to taste 1/2 cup all-purpose flour 1 (4-oz) container of diced pancetta OR 8 pieces of bacon, cut into small pieces 2 tbsp olive oil 1 shallot, diced 1 white/yellow onion, diced 3 carrots, peeled and diced 2 celery ribs, diced 2 cups dry white wine (ex. Chardonnay) 2 1/2 cups beef broth 2 sprigs fresh thyme 2 sprigs fresh rosemary 2 fresh bay leaves -for the polenta- 3 1/2 cups chicken broth 1 cup polenta 3 tbsp butter 2 cups grated parmigiano-reggiano cheese 1 tsp salt, plus more to taste INSTRUCTIONS: 1. Make the short ribs: Preheat the oven to 350 degrees F. 2. Season short ribs with the pepper and 1 tsp of the salt on all sides. Dip seasoned short ribs in all-purpose flour on all sides, and shake off any excess flour. 3. In an oven-safe Dutch oven/pot, cook pancetta on medium heat, stirring occasionally, until crispy, about 5 minutes. Once crispy, remove pancetta with a slotted spoon (do not discard pancetta grease in pot). 4. Add olive oil to the Dutch oven and heat on medium-high heat. Add seasoned short ribs and brown on ALL sides, about 45 seconds per side. Do not overcrowd the Dutch oven - brown in batches, if needed. Remove short ribs from the Dutch oven once all are browned. 5. Lower heat to medium and add shallot, onion, carrots and celery. Cook for about 5 minutes, stirring occasionally, until somewhat softened. 6. Add wine and scrape bottom of Dutch oven to deglaze. Bring to a boil on medium heat. Boil, undisturbed, for 2 minutes. After 2 minutes, add beef broth and remaining 1 tsp salt. 7. Bring short ribs back to the Dutch oven and make sure they are almost fully submerged in the liquid. Add thyme, rosemary and bay leaves. Taste for salt, and add more if needed. 8. Cover with a lid, and place in the preheated oven and cook for 2 hours. After 2 hours, reduce oven temperature to 325 degrees F and cook for an additional 45 minutes, or until short ribs are fall-off-the-bone tender. 9. Make the polenta: In a saucepan, bring chicken broth to a boil on medium heat. Once boiling, slowly add polenta and continuously whisk until smooth. Lower temperature to low and cover with a lid. Cook, whisking every few minutes to prevent sticking to the bottom of the pan, for 20 minutes. Remove from the heat. Stir in the butter, cheese and salt to taste. Serve with short ribs and enjoy!

Chocolate Peanut Butter Hearts for Valentine's Day with @gabbacado Ingredients: •3/4 cup oat flour (blend oats into flour) •1 cup creamy peanut butter •pinch of salt (only if your peanut butter is unsalted! If it is salted, you can skip this ;) •8-10 pitted medjool dates (the softer and gooier the better. If they aren’t soft and gooey, I recommend boiling until soft and draining the water) •2 cups dark chocolate chips or chopped up dark chocolate bar + a spoonful of coconut oil for melting •dash of vanilla extract Directions: -blend together all ingredients (minus the chocolate) in a food processor or blender -press into heart molds and place in the freezer for 30 mins -melt chocolate and coconut oil on the stove or in the microwave -coat with the melted chocolate, drizzle with peanut butter, and place in the freezer for 30 mins- 1 hour. -store in the fridge and enjoy!

Ingredients: ½ cup cold water 1 packet unflavored gelatin 1 cup champagne or Prosecco ½ cup vodka (plain or citrus) ¼ cup sugar 1 tsp fresh lemon juice (adjust to taste) Edible gold glitter Instructions: 1. Bloom the gelatin by pouring the cold water into a small bowl, sprinkling the gelatin evenly over the surface, and letting it sit for 5 minutes. 2. In a small saucepan or pot, combine the champagne and sugar and heat on low until the sugar is completely dissolved (do not boil). 3. Remove from heat and whisk in the bloomed gelatin until fully dissolved. 4. Stir in the vodka and lemon juice, then add a pinch of edible gold glitter (more if desired). 5. Pour the mixture into mini jello shot cups. 6. Let set for at least 5 hours or overnight for the best texture. 7. Enjoy!
