a.k.a. Rainbow cake, Italian flag cookies, tricolor cookies, Neapolitan cookies, Venetian cookies, seven layer cookies, seven layer cake.
An Italian-American confection that is traditionally made in the color of the Italian flag, but I couldn't resist making a vibrant rainbow version too. This dessert is made of layers of soft, dense sponge cake made with almond paste and topped with Ghirardelli semi-sweet chocolate. Apricot jam was spread between the layers of the traditional tri-colored sweets and raspberry jam was spread between the layers of the rainbow version.
