A fluffy and moist spiced cake loaded with cranberries, dusted with powdered sugar, and topped with a halved Godiva® cranberry truffle.
Cake flour, baking powder, baking soda, sugar, sea salt, and ground spices (allspice, cardamon, cinnamon, cloves, and ginger) were mixed together with extra-virgin olive oil, vanilla extract, apple cider vinegar, and Perrier® sparkling mineral water. The cranberries were added last to the mixture which was then poured into parchment paper lined mini spring-form pans and baked.
