4. Bread and Butter Pudding with vanilla ice cream

Ingredients

4 slices of white bread
25 gms. butter
25 gms. raisins / sultanas
25 gms. brown sugar
250 ml. milk
2 eggs
raspberry jam (optional)
orange zest (optional)
pinch of cinnamon
pinch of nutmeg

Method

1. Pre-heat oven to Reg. 4 (180 degrees C.)
2. Butter the bread & cut into shaped slices.
3. Place bread at base of greased oven-proof dish. Sprinkle
raisins, sugar, zest & cinnamon on top.
4. Repeat with another layer, spreading raspberry jam on one
of them.
5. Add a 3rd and final layer - without the same toppings.
6. Beat the eggs and remaining sugar together in a bowl,
adding the milk until the mixture is smooth.
7. Pour milk mixture over the bread slices and leave it to
to soak for about 30 minutes. Sprinkle nutmeg on top.
8. Bake in pre-heated oven for 30 minutes until golden & set.
