Moist and gooey with a crunch topping...
You might remember the old oatmeal cake recipes all the same but yet different and probably have one of your own.
This is a play on one of my own old family recipes.
Cake
1½ cups hot water
1 cup old fashioned oatmeal
1 cup Packed brown sugar
1 cup white sugar
½ cup butter, at room temperature
2 eggs
1⅓ cups all-purpose flour
2 tsp cinnamon
2 Tbsp cocoa powder
1/2 raisins ( optional)
1 tsp baking soda
½ tsp salt
Topping
½ cup butter
1 cup brown sugar
1 Tbsp milk
1/2 cup oatmeal
1 cup chocolate toffee bits or large crumbled heath bar
Instructions
Preheat the oven to 350. Spray a 9x13-inch baking dish with nonstick cooking spray.
Combine the water raisins and oatmeal and allow to soak while you prepare the remaining ingredients.
Cream together the butter and both sugars. Beat in the eggs. In another bowl, mix together the flour, cinnamon, cocoa powder, baking soda and salt. Add half of the flour to the creamed butter mixture, followed by the soaked oatmeal /raisins then the remaining flour, mixing between additions. Pour into the prepared baking dish and bake until set, 30- 35-minutes.
For the topping. Combine the butter, brown sugar and milk in a saucepan. Bring to a full boil, while stirring add in the oatmeal. Pour over the cake, let cool for just a minute or two and sprinkle with toffee bits.

Notes…. delicious add ins are chocolate chips,coconut and nuts I like to change it up with what I have in my pantry.
