A traditional Finnish porridge usually served around Easter time.
Rye flour, rye malt powder, hot water, dark molasses, zest from an orange, a lime, and a grapefruit, along with a dash of salt were used to make this time consuming dish. Starting with the repetitive cycle of stirring in small portions of the ingredients and setting it aside, to cooking the concoction on the stovetop, then slowly baking the porridge in the oven. The entire process took hours. The homemade mämmi was then chilled for a few days to allow it to properly set before being served with cold milk and sugar.
Note: Traditional mämmi uses Seville orange zest, which I did not have on hand. I substituted it with a mix of orange, lime, and grapefruit zest.
