Pesto Pasta
@cooksbya Enjoy this easy and quick pesto pasta recipe! A perfect recipe for summer! Ingredients: • ½ of a yellow onion, diced • 3 garlic cloves, minced • Small shallot, diced • Chicken cutlets (full recipe on @cooksbya Instagram page) • 1 tablespoon unsalted butter • 1 tablespoon good quality olive oil • ¼ teaspoon smoked paprika • ½ teaspoon garlic powder • ½ teaspoon onion powder • ½ teaspoon dried oregano • ½ teaspoon crushed red pepper flakes • ¼ teaspoon kosher salt • ½ cup chicken stock • ½ cup pesto* (see note) • 1/3 cup heavy cream • 3 servings of rigatoni pasta • Grated Parmesan cheese • Shredded mozzarella *Note: try to find pesto with minimal ingredients or make your own at home! Directions: 1. In a large pot, bring your water to a boil and salt heavily. 2. Add your rigatoni pasta and cook until al dente, according to package instructions. 3. In a large skillet over medium heat, add your butter and olive oil. Allow the butter to melt. 4. Add your diced yellow onion and shallot to your skillet. 5. Cook until onions have softened, for about 3 minutes. 6. Add your seasonings and minced garlic. 7. Cook until garlic becomes fragrant, about 2 minutes. 8. Add your chicken stock and reduce to about 25% liquid (see video for reference). 9. Add your pesto and heat for 1-2 minutes. 10. Add your heavy cream and turn down the heat to low. 11. Add 2 tablespoons of pasta water and your cooked pasta. 12. Mix everything together and add your parmesan cheese and mozzarella, measure with your heart!! :) 13. Turn heat off and serve with more Parmesan cheese and your crisp chicken cutlets.
