Grilled Jerk Salmon Burgers
@typhaniecooks This jerk salmon burger is packed with Caribbean flavor! It’s light, spicy, and perfect for summer cookout season. Try this recipe by @typhaniecooks INGREDIENTS: Jerk Marinade: ½ yellow onion 4 garlic cloves 2 scallion stalks 1 tbsp fresh thyme leaves 2 scotch bonnet peppers (remove seeds for less spice) ½ tbsp ginger paste 1 tsp allspice berries ¼ tsp cinnamon ¼ tsp nutmeg ½ tbsp all-purpose seasoning ½ tbsp turbinado sugar 1 tbsp vegetable oil 1 tbsp soy sauce Juice of ½ lime Juice of ½ orange 1 tsp browning sauce ¼ tsp liquid smoke Salmon: 1 lb skinless salmon fillets 2 tbsp finely diced red bell pepper 2 tbsp finely diced green bell pepper 1 tsp seafood seasoning 1 egg ¼ cup bread crumbs Lemon-Garlic-Herb Aioli: ¼ cup mayonnaise 2 garlic cloves, grated 1 tbsp finely chopped parsley 1 tbsp finely chopped tarragon Juice of ½ lemon ¼ tsp salt 2 tsp Worcestershire sauce Additional Ingredients: 4 brioche burger buns Butter spread for the burger buns INSTRUCTIONS: 1) Add all of the ingredients for the jerk marinade to a blender. Blend until almost smooth, but still slightly chunky. 2) Use a knife or a food processor to finely chop the raw salmon fillets. 3) In a medium bowl, combine the chopped salmon, 2 tbsp of the jerk marinade, diced bell peppers, seafood seasoning, egg, and bread crumbs. Use your hands to mix well. 4) Divide the seasoned salmon into 4 even portions, and shape into burger patties. Allow to set in the refrigerator for 30 minutes. 5) In a small bowl, make the lemon-garlic-herb aioli by mixing together the mayonnaise, grated garlic cloves, parsley, tarragon, lemon juice, salt, and Worcestershire sauce. 6) Heat an indoor or outdoor grill to 375 degrees F. Lightly butter and toast the brioche buns on the hot grill for about 30 to 60 seconds or until grill marks are achieved. (Alternatively, use a grill pan over medium to medium-high heat on the stovetop.) 7) Lightly grease the grill or grill pan, and grill the salmon patties for 4 to 5 minutes on each side or until cooked to 145 degrees F internally. 8) Assemble the burgers with toppings of choice, and don’t forget the aioli! 9) Enjoy!

By @mymanabites Full recipe here https://ift.tt/L3N4sqK INGREDIENTS Mango Jam 2 cups chopped ripe mango ¾ cup granulated sugar 1 teaspoon lime juice Crust 24 graham crackers ¾ cup unsalted butter, melted Cheesecake Filling 3 (8-ounce) blocks cream cheese, softened ¾ cup powdered sugar 1 teaspoon vanilla extract 1 cup heavy whipping cream Topping 1 ripe mango, peeled, thinly sliced, and shaped into roses ¼ cup white chocolate chips, melted PREPARATION 1. Make the mango jam: Cook the mango and sugar in a 2½-quart nonstick saucepan over medium, stirring often, until softened, 6–7 minutes. Gently mash the mixture. Stir in the lime juice. Cook, stirring often, until thick and jammy, 4–5 minutes. Transfer to a bowl. Chill in the fridge for 30 minutes. 2. Meanwhile, make the crust: Pulse the graham crackers in a food processor until fine. Add the melted butter. Pulse until the texture resembles wet sand. 3. Place 4 (4-inch) nonstick springform pans on a baking sheet. Place ½ cup crust mixture in each pan, and press firmly into the base and sides using a flat-bottomed cup. Chill until ready to use. 4. Make the cheesecake filling: Beat the cream cheese in a large glass bowl (10–12 inches) on medium speed until smooth, 1–2 minutes. Add the powdered sugar and vanilla; beat until combined, 1–2 minutes. In a separate bowl, beat the heavy cream on high speed until soft peaks form, 2–3 minutes. Fold the whipped cream into the cream cheese mixture. 5. Spoon the cheesecake filling into the pans to fill each halfway (about ¼ cup each). Add 1½ tablespoons chilled jam to the center of each, then top with more filling (about ¼ cup). Smooth the tops, cover, and refrigerate for at least 4 hours or up to overnight. 6. Loosen each pan in a bowl of warm water for 2 minutes. Release the rings. Invert the cheesecakes onto plates. Top each with a mango rose. Drizzle with melted white chocolate. 7. Enjoy!

☕️ Matcha Marshmallows with Marshmallow Root Recipe by @katlieu 🍓✨ These fluffy, chewy, Asian-inspired marshmallows are packed with earthy matcha, a touch of pandan, and a whisper of savory miso. A fun treat with layered flavors and textures! Ingredients: 2 1/2 tablespoons gelatin powder 1/2 cup cold water (for blooming) Optional: ½ teaspoon marshmallow root extract 1 cup granulated sugar 1/2 cup maple syrup or honey 1/3 cup water (for syrup) 1/2 teaspoon pandan extract 1 teaspoon matcha powder 1 teaspoon to 1 tablespoon red miso paste (adjust to taste) Optional toppings: freeze-dried strawberries, unsweetened coconut shreds Powdered sugar, for dusting 1. In a small bowl, bloom the gelatin powder with the cold water. Let it sit until it is fully bloomed and jelly-like. Transfer the bloomed gelatin to the bowl of a stand mixer fitted with a whisk attachment. 2. Add the marshmallow root extract if using. 3. Combine the granulated sugar, maple syrup or honey, and 1/3 cup water in a medium saucepan. Heat over medium until the syrup reaches 241°F to 245°F (soft-ball stage). 4. Turn the mixer on low and carefully drizzle the hot syrup into the gelatin mixture. Once all the syrup is added, increase the speed and whip until the mixture is thick, glossy, and pale. 5. Add the pandan extract, matcha powder, and red miso paste. Start with 1 teaspoon of miso and increase to taste. Whip again until fully incorporated and stiff ribbons form. 6. Pour the marshmallow mixture into a small, parchment-lined baking dish. Before it sets, top with freeze-dried strawberries and coconut shreds. 7. Let the marshmallows sit at room temperature for at least 1 hour, or until firm. Dust with powdered sugar before cutting into cubes to prevent sticking.

Peaches and Cream Yogurt Clusters

Creamy plain Greek yogurt, chopped peaches, and honey are scooped into clusters and frozen, then dipped in silky white chocolate for the perfect refreshing bite. No oven, no stress. Just freeze and enjoy. Full recipe below and in bio! INGREDIENTS 1½ cups chopped fresh or frozen peaches (½-inch pieces) 1 cup plain whole-milk Greek yogurt 1 tablespoon honey 1 cup white chocolate melting wafers 1 teaspoon refined coconut oil (optional for smoother chocolate) PREPARATION Using a spatula, stir together the peaches, yogurt, and honey in a medium glass or ceramic bowl until evenly coated. Line a large rimmed baking sheet (13 x 9-inch or similar size) with parchment paper. Using a tablespoon or a small cookie scoop, scoop the mixture into 10–12 clusters spaced at least 1 inch apart on the lined baking sheet. Freeze for about 2 hours, until the clusters are firm to the touch and no longer sticky. Microwave the chocolate wafers and coconut oil (if using) in a small microwavable glass bowl on MEDIUM until melted and smooth, 40 to 60 seconds, stopping to stir every 20 seconds. Remove the frozen clusters from the baking sheet. Working with 1 at a time, dip the clusters into the melted white chocolate. Let the excess drip off, then place each cluster on the parchment-lined baking sheet. Return to the freezer, and freeze for 10–15 minutes, until the chocolate is set and firm.

Salmon Cheesesteak Egg rolls

But have you ever had a salmon cheesesteak egg roll? @brandongouveia took salmon, sautéed peppers and onions, and melty mozzarella, and tucked it all into a crispy egg roll wrapper, then fried it until golden and crispy! Full recipe above INGREDIENTS 2 tbsp olive oil, divided 2 lb boneless, skinless salmon 1 tbsp Old Bay seasoning 1 small onion, diced 1 orange bell pepper, diced 1 green bell pepper, diced 2 tsp garlic powder 2 tsp black pepper 12 egg roll wrappers 2 cups shredded mozzarella cheese ½ cup water, or as needed 6 cups (48 ounces) vegetable oil Hot honey BBQ sauce, for drizzling 3 scallions, chopped Instructions Rub 1 tablespoon of the olive oil over the salmon. Sprinkle the salmon with the Old Bay. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the salmon, and cook on both sides until cooked through, about 5 minutes per side. Remove from the skillet, and set aside. Add the onion, bell peppers, garlic powder, and black pepper to the skillet. Cook, stirring often, until vegetables are softened, about 5 minutes. Remove from heat. Return the salmon to the skillet, and break it up into smaller pieces, leaving some larger chunks. Lay egg roll wrappers flat like a diamond, with 1 corner pointing toward you. Place the salmon mixture evenly on each wrapper, just below the center of the wrapper. Sprinkle evenly with the mozzarella. Fold the bottom of each wrapper corner up over the filling, and gently tuck in. Fold in the side corners toward the center like an envelope. Roll tightly toward the top corner. Seal the edge with a dab of water to hold closed. Heat the vegetable oil over medium-high heat in a deep pan until the oil reaches 350°F–375°F (180°C–190°C). Working in batches, fry the egg rolls until golden brown and crispy, 3–4 minutes per batch. Transfer to a wire rack or a paper towel to drain. Drizzle the egg rolls with hot honey BBQ sauce, and sprinkle with chopped scallions. Serve hot! Enjoy!

Tender chicken simmered in a trifecta of soy sauce, sesame oil, and rice wine — each bite bursting with garlicky, basil-kissed umami @groovyfoodiess Recipe is by @derekkchen INGREDIENTS 2 pounds skin-on chicken thighs or drumsticks, boneless 3 tablespoons sesame oil 20 garlic cloves 5 fresh ginger slices 3 fresh Thai red chiles ⅓ cup shaoxing wine 3 tablespoons light soy sauce 2 tablespoons rock sugar 1 tablespoon dark soy sauce 1 handful fresh Thai basil Cooked rice or noodles, for serving PREPARATION Cut the chicken into about 2-inch pieces. Set aside. Heat a medium wok over medium. Add the sesame oil, and let it heat, about 30 seconds. Add the garlic, ginger, and chiles. Cook, stirring often, until fragrant, about 2 minutes. Add the chicken. Cook, stirring occasionally, until the chicken is 50% cooked or until a pale white color, about 5 minutes. Add the shaoxing wine, light soy sauce, rock sugar, and dark soy sauce. Reduce the heat to low. Cover the wok, and simmer for 15–20 minutes, until the chicken is fully cooked, firm, and bouncy. Uncover, and increase the heat to medium-high. Stir until the sauce slightly thickens, about 3 minutes. Add in the fresh chilis and fresh thai basil Serve with hot rice or noodles. Enjoy!

INGREDIENTS 6 ounces cha lua (Vietnamese pork) 6 ounces pate 6 ounces Vietnamese butter 6 ounces cha chien (Vietnamese pork protein) (can replace with sliced tofu, tempeh) 2 cucumbers 2 jalapeños 1 cup Vietnamese pickled carrots ½ cup torn fresh cilantro 4 bánh mì baguettes, sliced into 1-inch pieces PREPARATION Slice your cha lua into ¼-inch pieces, and arrange them neatly on a large board in an S shape. Place your pate and butter in 2 separate ramekins. Position the ramekins between the corners of the S shape, then fill in gaps with the cha chien. Peel and slice the cucumbers to match the shape of the cha lua. Thinly slice the jalapeños. Assemble neatly on the board. Fill in the gaps with the pickled carrots and cilantro. Place the bánh mì pieces on a separate plate. Serve, encouraging guests to build their own mini bánh mì bites — layering pate, butter, meat, pickles, and herbs on baguette slices. Enjoy!

@juanbiteatatime Edible Cherry Blossoms for Mother’s Day! Had to make a little something special for my mom today and with it being spring, I thought it’d be the perfect time to get a little creative. These are the perfect sweet treat to make your mother figures and it’s so easy! Melt about a cup of dark chocolate chips (you can use the microwave) then pour that into the cup or mold of your choice. Coat the edges of your cup with the chocolate to fully cover it and put in the freezer for a few minutes to let it harden. Once it’s hardened, fill up the cup with your choice of ice cream and place a cinnamon stick in the center. Put that back in the freezer to let the ice cream solidify a bit and then place crushed Oreos for the “soil”. Put a piece of cotton candy on top to give it the cherry blossom effect and then dig in!
