2 tbsp olive oil
1 onion, chopped
2 cloves garlic, crushed
400g chopped tomatoes
1 tbsp sun-dried tomato paste
1 tsp honey
500ml vegetable stock
250g ditaloni rigati pasta
400g can chick peas, drained and rinsed
Grated Parmesan, to serve
Heat the olive oil in a large pan and gently fry the onion for 5 minutes; add the garlic and cook for 1 minute.
Add the tomatoes, season and simmer gently for 20 minutes.
Stir in the sun-dried tomato paste, honey and stock.
Add the pasta and simmer gently for 20 minutes.
Stir in the chick peas and cook for another 5 minutes.
Serve in bowls, sprinkled with Parmesan. (Serves 4)
